The clearest surviving window into Old Babylonian cooking is a group of three cuneiform tablets containing roughly twenty-five culinary formulations. Written in Akkadian, they are generally dated to the first half of the second millennium BCE and are often described as the oldest substantial recipe collection yet known. Their instructions concern several dishes rather than one standardized stew, and the tablets do not identify a single author, cook, or occasion.
Meat and poultry dominate much of the collection. The texts also call for ingredients such as water, animal fat, milk, beer, onions, leeks, garlic, herbs, and other plant seasonings whose exact identification is sometimes debated. Some dishes bear geographic or cultural labels, including references to neighboring regions. These names indicate that Babylonian scribes and cooks recognized culinary difference, although they do not prove where each recipe originated or how faithfully it represented another community's food.
The recipes are concise because they were probably written for knowledgeable practitioners. A typical sequence may name the meat, direct the cook to prepare water and fat, add crushed or chopped aromatics, and combine components in a pot. Some formulations employ broth, beer, or milk; others build flavor through repeated additions of alliums and herbs. The tablets rarely provide quantities, cooking times, vessel sizes, or serving numbers. Modern versions are therefore experimental reconstructions, not direct reproductions. Translators must identify damaged signs and uncertain plant names, while cooks must supply the unwritten judgments of heat, texture, dilution, and timing.
These dishes belonged to a food system supported by irrigated grain agriculture, sheep and goat husbandry, gardens, fishing, and long-distance exchange. Meat was not necessarily everyday fare for everyone. Elaborate meat dishes may better reflect palace, temple, elite, or other well-provisioned kitchens than the routine meals of poorer households, whose diets depended heavily on barley and other staples. The tablets themselves do not establish who ate every dish.
Their importance lies not in proving that Mesopotamians invented stew, a cooking method far older than writing, but in documenting culinary classification and technique. They show cooks treating liquid, fat, meat, vegetables, and aromatics as components to be deliberately layered and transformed. That logic remains familiar in modern Iraqi and wider West Asian pot cookery, but a direct line from any one tablet recipe to a specific present-day dish cannot presently be demonstrated. The strongest connection is technological and sensory: slow cooking in a vessel, careful seasoning, and the conversion of tough or strongly flavored ingredients into a shared, aromatic meal.

Southern Mesopotamia was an intensely cultivated landscape of cities, canals, fields, orchards, and grazing lands. Barley was a principal crop and accounting commodity, while institutions managed substantial stores, herds, labor forces, and food allocations. River and overland routes connected Mesopotamian cities with Anatolia, the Levant, Iran, and the Persian Gulf. The Old Babylonian political world was divided among competing kingdoms before and during Babylon's rise under Hammurabi, and trained scribes recorded administration, literature, medicine, divination, and, unusually, culinary knowledge on clay.
