Bonga shad is a small, oily clupeid fish, usually identified as Ethmalosa fimbriata, found along the West African coast and especially in estuaries, lagoons, and brackish river mouths. Its tendency to appear in substantial catches made it valuable, but also created an immediate problem: in tropical heat, fresh fish spoils quickly. Drying and smoking transformed a highly perishable catch into a concentrated food that could be stored, sold, and carried inland.

There is no securely documented moment when people first began preserving bonga this way. Fish smoking and drying are much older technologies, and an exact origin in 1700 cannot presently be demonstrated. A reasonable historical reconstruction is that early modern coastal communities used locally adapted versions of these established methods well before industrial refrigeration. Even a modest quantity supplied protein, fat, and an intense savory taste to a much larger pot of staple food. If small bones were eaten, it could also provide substantial calcium.

Historical context

The Senegambian coast connected Atlantic shipping with riverine and overland trade extending hundreds of kilometers into West Africa. Saint-Louis, founded in the seventeenth century, was becoming an important French trading station, while European powers competed for coastal commerce amid the expanding Atlantic slave trade. Most food preservation still depended on drying, smoking, fermentation, and salt rather than mechanical refrigeration.
