Broa de milho is a dense Portuguese bread in which maize flour is usually combined with rye or wheat. It belongs especially to northern and central Portugal, where its thick crust, compact yellow crumb, and mildly sweet grain flavor complement soups, pork, sardines, and salted cod. Unlike a light wheat loaf, broa is commonly cut into substantial slices or broken at the table; it remains a familiar accompaniment to caldo verde.

American crops were entering Iberian ports, but their movement from novelty to field staple took decades and varied by region.
