Churchkhela is a Georgian confection made by enclosing a string of nuts in a dried coating of thickened grape must. Its familiar elongated form follows directly from the method: walnut halves, or sometimes hazelnuts, are threaded onto cord, dipped into warm fruit paste and suspended to dry. The finished sweet is dense rather than syrupy, with a chewy or tender grape layer surrounding crisp, fatty nuts. Color and flavor vary with the grape, ranging from amber and rust-red to deep brown.
Preparation traditionally begins during or after the grape harvest. Fresh must is strained and simmered, concentrating its sugars and flavors. Flour—usually wheat flour in widely recorded modern Georgian practice—is whisked into the liquid to make a pudding-like mixture often associated with tatara. The nut strings are dipped, hung until the coating sets, and dipped again when a thicker casing is wanted. They then dry in moving air for days or longer. Extended resting can mellow the texture, while poor drying encourages spoilage. The process therefore combines concentration, thickening and dehydration rather than relying on refined sugar or refrigeration.
Churchkhela belongs to the household economy of Caucasian viticulture. Grapes supplied drink, fresh fruit and concentrated must, while walnuts contributed protein, oil and storage stability. Bringing them together produced compact, energy-rich food for winter, journeys and hospitality. Georgian popular tradition says warriors carried churchkhela as provisions; this is plausible in practical terms, but the antiquity and details of that story are not securely documented. Likewise, claims that the confection has existed unchanged since antiquity go beyond the available evidence. Its exact date of emergence is unknown.
Related nut-filled grape confections occur under different names in Armenia, Azerbaijan, Turkey and elsewhere around the Caucasus and Anatolia. These similarities demonstrate a regional family of techniques, but they do not by themselves establish one exclusive place or moment of invention. Recipes differ in the nuts used, the treatment of the must, spices, flour proportions, final thickness and desired dryness. Churchkhela remains particularly important as an expression of Georgian harvest culture and is commonly made or purchased for celebrations, gifts and everyday eating.

Some makers use clarified or concentrated juice, controlled drying and packaged storage; others add sugar or create brightly colored fruit variants. Historical context
The Georgian lands were divided among kingdoms and principalities contested by the Safavid and Ottoman empires, while Tbilisi often stood within a Persian political and commercial sphere. Caucasian vineyards and walnut trees long predated the transatlantic exchange. Although maize and other American crops were spreading through parts of the Old World, churchkhela’s defining ingredients—grapes, walnuts and wheat—were established western Eurasian foods, so its connection to the Columbian Exchange is chronological rather than ingredient-driven.
