Chickpeas are the edible seeds of Cicer arietinum, a low-growing annual pulse rather than a prepared dish. Their wild ancestor, Cicer reticulatum, has a restricted natural range in southeastern Anatolia. Archaeobotanical finds indicate that people were gathering and probably cultivating chickpeas during the early Neolithic, but individual charred seeds do not always distinguish wild plants from fully domesticated crops. Over subsequent millennia, chickpeas spread through Southwest Asia, the Mediterranean, northeastern Africa, and South Asia. Different environments and culinary preferences encouraged distinct seed types and uses. They were boiled whole, ground into flour, added to stews, sprouted, roasted as snacks, or mashed. Written recipes and named dishes belong to much later societies, so the first farmers should not be pictured eating modern hummus or falafel. Hummus bi-tahina combines cooked chickpeas with sesame paste and other ingredients in a historically later preparation; falafel has a disputed history and may use fava beans, chickpeas, or both. South Asian chickpea dishes likewise reflect later crop movement and regional development.
Modern canned chickpeas and packaged flour compress work once performed by soaking, grinding, and long cooking. The seed itself, however, preserves the central Neolithic innovation: transforming a geographically limited wild pulse into a portable, storable crop capable of supporting food traditions across several continents.

Historical context
Communities across the northern Fertile Crescent were shifting from mobile gathering and hunting toward permanent or semi-permanent villages supported by cultivated cereals and pulses. Pottery was absent or not yet routinely used in many settlements, so food was stored and cooked with baskets, stone vessels, plastered containers, hides, and hearth technologies. Obsidian and other materials circulated over hundreds of kilometers, showing that these villages belonged to broad exchange networks. Sheep, goats, cattle, and pigs were also entering increasingly managed relationships with people, although the timing differed by region.
