Dawadawa and iru are regional names for pungent condiments made principally from the seeds of the African locust bean tree, Parkia biglobosa. Rather than constituting a stand-alone meal, the fermented beans are added in small quantities to soups, sauces, stews, and preparations of grain, leafy vegetables, or pulses. They contribute salt-free savor, aroma, fat, and protein, although some contemporary products also contain added salt. Their intensity made a modest portion capable of seasoning a household pot.

Production begins with a difficult raw material. Locust-bean pods contain sweet yellow pulp surrounding hard seeds. Processors remove the seeds and boil them for many hours, sometimes using ash or other locally available aids to facilitate softening. The softened seed coats are removed by pounding, rubbing, and repeated washing. The cotyledons are then cooked again and left warm under leaves, cloth, or another covering. Details vary considerably among communities and producers, so no single procedure should be projected unchanged into the medieval period.

The transformation is an alkaline fermentation dominated in well-studied modern examples by Bacillus bacteria. These organisms break down seed proteins and generate the characteristic ammoniacal smell and powerful savory taste. Unlike lactic fermentation, the process generally raises rather than lowers pH. Successful production depends upon temperature, moisture, cleanliness, experience, and timing. Finished beans may remain loose, be mashed, or be pressed into balls or cakes and dried for storage and sale.

In cooking, the condiment is commonly dissolved or crushed into a simmering sauce. Its role resembles that of other protein-rich fermented seasonings: it gives depth to otherwise mild staples and helps diversify diets based heavily on cereals and tubers. Nutritionally, locust-bean seeds are substantial, but the small amount normally used means that their culinary effect is generally greater than their contribution to a single serving’s protein or energy.

The names do not identify one completely uniform food. Iru is especially associated with Yoruba-speaking areas, while dawadawa is used more broadly across parts of West Africa; other communities have their own names and processing conventions. Production and marketing have often been associated with women, and the condiment links managed trees, seasonal pod collection, household expertise, and local exchange.

Assigning the food specifically to 1200 CE is a reasonable historical reconstruction rather than a securely documented invention date. African locust bean is indigenous to the savanna, and its use is deeply embedded in regional foodways, but direct evidence identifying medieval fermented seeds as dawadawa or iru is limited. Present-day procedures and later descriptions cannot by themselves prove an unchanged medieval recipe.

Today, traditionally fermented locust beans coexist with industrial bouillon cubes, refrigerated pastes, dried powders, and packaged seasonings. Bouillon has sometimes displaced the condiment, yet dawadawa and iru remain markers of regional taste and identity. Their survival demonstrates how tree foods, microbial fermentation, and specialized household knowledge created concentrated flavor well before industrial flavor enhancers.

Historical context

West Africa contained farming villages, market towns, and expanding political centers connected by regional and trans-Saharan trade. The Ghana Empire had declined, while Mali was emerging as a major power during the early thirteenth century. Gold, salt, textiles, and other goods moved across distances of hundreds or thousands of kilometers, but most food remained locally produced. Savanna communities cultivated grains such as millet and sorghum and managed useful indigenous trees. Chili peppers and tomatoes had not yet arrived from the Americas, making local aromatics and fermented seasonings especially important sources of culinary complexity.
