The vessels introduce an important qualification. Certain Roman instructions mention lead or lead-containing containers because they transferred heat efficiently and were thought to improve the must. Acidic grape juice can dissolve lead, and heating increases the opportunity for contamination; sweet-tasting lead acetate may consequently form. Chemistry makes the hazard credible, but neither the prevalence of lead-vessel use nor its contribution to illness across Roman society can be quantified from surviving evidence. Not every batch was made in lead, and claims that grape syrup broadly caused Rome’s decline go far beyond what the evidence supports.
Defrutum and sapa mattered because concentration converted a seasonal, fermentation-prone liquid into a compact and versatile source of sweetness. Their production joined vineyard agriculture to household cooking, preservation, and the wine trade. Mediterranean cuisines still reduce grape must into products such as Italian mosto cotto and other regional grape molasses. These are not necessarily unchanged Roman survivals, but they demonstrate the continuing practicality of transforming grapes through evaporation rather than fermentation—and modern food-safe vessels avoid the most troubling risk associated with some ancient instructions.
