Xiā mǐ—literally “shrimp rice”—is not a rice dish but a Chinese name for small shrimp dried until they become firm, light, and intensely savory. In present-day usage, the shrimp are commonly cooked, salted, dried, and shelled, although size, salting, and whether traces of shell remain vary by producer. The product functions less as a main protein than as a concentrated seasoning: a handful can deepen the taste of broth, rice, congee, vegetables, fillings, and sauces.

The preservation logic is straightforward. Small coastal shrimp spoil rapidly in warm, humid conditions, especially before mechanical refrigeration. Salting, heating, and dehydration suppress microbial growth and reduce the weight that must be stored or transported. These advantages make dried shrimp entirely plausible in the maritime economy of southern China around 1000 CE. The exact origin of xiā mǐ, however, is not securely tied to that year or to one locality. Chinese traditions of drying and salting seafood are old, but identifying a specific medieval term with the standardized modern product requires caution.

Traditional production, as documented in later practice, begins with a fresh catch sorted from other small marine animals. Producers may boil or steam the shrimp in salted water before spreading them on mats or trays in the sun. Drying concentrates both salt and naturally occurring savory compounds. Once dry, agitation and hand sorting loosen shells and remove debris. This sequence is a reasonable historical reconstruction, not direct observation of a workshop in 1000. Weather mattered: rain or persistent humidity could slow drying and increase losses, while fuel-assisted finishing added expense.

In the kitchen, dried shrimp are often rinsed or soaked, then minced, pounded, fried with aromatics, or simmered whole so that their flavor enters another food. They complement mild staples and vegetables and can supply protein, calcium, vitamin B12, and other nutrients in small quantities. They can also carry substantial sodium, and they remain unsuitable for people with crustacean allergy. Dried shrimp should not be confused with fermented shrimp pastes, which use related raw materials but rely on prolonged fermentation and produce a different texture and flavor.

The product’s historical importance lies in mobility and concentration. Drying transformed a highly seasonal shoreline catch into a compact commodity that could circulate through urban markets and reach kitchens away from immediate landing places. Over time, dried shrimp became embedded in several regional Chinese cuisines and in foodways carried through migration and trade across Southeast Asia and beyond. Modern factories now use controlled heating, mechanical drying, refrigeration, and sealed packaging, yet sun-dried and small-batch versions survive. Today’s xiā mǐ therefore preserves an old food-system solution: capture abundance briefly, remove water, and release the coast’s flavor months later in another dish.

Historical context

China was under the Northern Song dynasty, whose expanding cities, monetized markets, canals, and regional commerce supported intensive movement of food. The empire contained many tens of millions of people, while major cities approached or exceeded populations unprecedented in contemporary Europe. Southern rice agriculture was growing in importance, and Guangzhou was a major maritime port connected to Southeast Asian and Indian Ocean trade. Along the humid southern coast, abundant fisheries coexisted with rapid spoilage, making salting and drying practical technologies for carrying seasonal catches into urban and inland markets.
