Funazushi and early narezushi

Funazushi is a surviving form of narezushi, the older Japanese family of fish preserved through salt and lactic fermentation with cooked grain. Its best-known modern home is the Lake Biwa region of present-day Shiga Prefecture, where crucian carp—especially fish identified today as nigorobuna—are made into an intensely sour, aromatic food. The relationship between this specific regional preparation and every early written reference to sushi is not certain, however. Medieval documents establish a varied world of fermented fish products, not a single standardized recipe.

The Engishiki, a compilation of court regulations and administrative procedures completed in 927, records several kinds of sushi among goods supplied to the court. These entries show that preserved fish participated in taxation, tribute, ceremony, and elite provisioning. They do not provide a complete working recipe, and identifying individual entries with modern funazushi requires comparison with later practices and regional traditions. The text nevertheless supplies strong written evidence that fermented fish-and-grain foods were institutionally important in Heian-period Japan.

Traditional funazushi production begins with freshwater fish cleaned through the gills while the body is kept substantially intact. Producers salt the fish heavily and hold it under pressure. After this initial curing, the fish is packed with cooked rice and weighted in a container for prolonged fermentation, commonly lasting many months and sometimes longer. Lactic-acid bacteria acidify the mixture, helping suppress spoilage organisms while developing the characteristic flavor. Details—including salting time, whether roe is retained, fermentation duration, vessel management, and the amount of rice served—vary among households and commercial makers. Historically, the fermented rice could be discarded while the fish was eaten in thin slices; modern service may retain some rice or present the fish with rice, tea, or sake.

This technique solved a central food-system problem: freshwater fish were seasonal and perishable, whereas salted, acidified fish could be stored and transported. Yet production was resource-intensive. Rice was both staple food and fermentation medium, while salt and prolonged storage carried substantial costs. Narezushi therefore reflects preservation knowledge as well as access to agricultural surplus and organized movement of provincial foods.

Over later centuries, Japanese sushi changed markedly. Fermentation periods shortened, vinegar increasingly supplied sourness directly, and early modern urban forms eventually led toward pressed sushi and Edo-style nigiri made with vinegared rice and seafood. Funazushi did not simply become nigiri; it remained a distinctive regional preserved food. Its modern significance lies in preserving the older meaning of sushi as fermentation—a reminder that today’s globally familiar dish emerged from a much broader history of fish conservation, grain use, and microbial transformation.

Historical context

Japan was governed from Heian-kyo, the imperial capital established in 794. Court administration depended heavily on taxes and tribute delivered in kind from the provinces, including rice, salt, sea products, and preserved fish. The Engishiki was commissioned in 905, completed in 927 as a multi-volume compilation of laws and procedures, and formally put into effect later in the tenth century. Refrigeration was unavailable; salting, drying, and fermentation were essential for moving seasonal foods through regional supply networks.
