Its acidity contributes flavor and may slow spoilage modestly, although injera remains perishable. Making it has historically required substantial skilled labor, often performed by women, from cleaning tiny grains through grinding, ferment management, and repeated griddle baking.
Today injera remains central to Ethiopian and Eritrean identity at home and across global diasporas. Urban mills, electric griddles, refrigeration, commercial starters, and imported grains have altered production. Pure-teff versions coexist with less expensive blends, while packaged injera travels farther than household bread once could. Its precise ancient chronology remains uncertain, but the continuing combination of fermentation, grain, shared eating, and sauce-bearing bread gives injera an unusually durable place in food culture.

Historical context
The Aksumite kingdom controlled parts of the northern Ethiopian and Eritrean highlands and participated in Red Sea commerce through routes associated with the port of Adulis. Aksum minted coins, used the written language Geʽez, and had adopted Christianity in the fourth century. Highland farmers worked strongly seasonal environments, cultivating cereals and pulses and keeping livestock, while trade connected northeastern Africa with Arabia, the eastern Mediterranean, and the Indian Ocean. These connections document a sophisticated agrarian and commercial society, but they do not provide a surviving recipe for teff injera.
