At the Neolithic settlement of Jiahu, pottery vessels retained chemical traces of a remarkable fermented drink. Residue analysis supports the presence of rice, honey, and fruit, with the fruit component commonly interpreted as hawthorn fruit, wild grape, or a combination of the two. The vessels belong to Jiahu’s early occupation, beginning around 7000 BCE. This makes the beverage one of the earliest chemically identified fermented drinks, although neither its ancient name nor a complete recipe survives.
Its ingredients brought together several parts of the local food economy. Rice was cultivated at Jiahu, though the extent of its domestication and its importance relative to gathered resources remain subjects of study. Honey supplied concentrated fermentable sugars. Hawthorn fruit or grapes could contribute sugar, acidity, aroma, and microorganisms. The chemical evidence identifies broad ingredients rather than exact proportions, flavor, alcoholic strength, or brewing sequence.
Preparation must therefore be reconstructed cautiously. Rice starch does not ferment efficiently unless first converted into simpler sugars. Cooking, chewing, sprouting, mold activity, or some combination of processes could have assisted conversion, but the residues do not establish which method Jiahu’s brewers used. Honey and ripe fruit could ferment more readily through naturally occurring yeasts. A plausible procedure involved combining processed rice with honey, crushed fruit, and water in pottery, then allowing the mixture to ferment. This is a reasonable technical reconstruction, not a directly observed ancient recipe.
The drink mattered because it required planning and the diversion of useful foods into a perishable, intoxicating product. Fermentation could transform seasonal ingredients, create new flavors, and perhaps extend their period of use, although this beverage should not automatically be treated as a preservation strategy. Some analyzed vessels came from burials, strengthening the possibility that fermented drink participated in ritual, commemoration, hospitality, or expressions of status. Residues alone cannot reveal who drank it, how frequently it was made, or whether ordinary meals also included it.
Later Chinese brewing traditions became highly sophisticated, especially through grain-saccharifying fermentation systems, but a direct line of continuity from Jiahu cannot be demonstrated. The discovery instead establishes that mixed fermentation was practiced in Neolithic China long before written brewing instructions. Its closest modern conceptual relatives are not necessarily a single named beverage but drinks that combine cereal, honey, and fruit fermentation. Jiahu shows that early villagers were already manipulating starches, sugars, microbes, and ceramic containers to make foods and drinks whose importance exceeded basic nourishment.

Historical context
Farming villages were spreading across several parts of China, but no states, cities, or writing systems yet existed there. Jiahu was a substantial early Neolithic settlement in the upper Huai River region, occupied by people who cultivated rice while also hunting, fishing, and gathering wild plants. Pottery made fermentation and liquid storage practical, while long-distance exchange is suggested by valued materials moving beyond their immediate sources. Elsewhere, early agricultural communities were established in Southwest Asia, but most of the world still lived by hunting, gathering, fishing, or mixed subsistence.
