Palm oil is the fat obtained from the fleshy outer layer of fruits of the African oil palm, Elaeis guineensis. It should be distinguished from palm-kernel oil, which comes from the seed and has a different fatty-acid profile. Archaeological sites in West and Central Africa have yielded oil-palm endocarp—the hard shell surrounding the kernel—showing that people collected and processed the fruit over millennia. A deposit assigned broadly to around the third millennium BCE can therefore fit a long regional history, but a nutshell fragment alone does not prove that liquid oil was extracted, and the supplied date should not be treated as a single securely documented moment of invention.

Fresh oil-palm fruit offers several foods. Its orange-red pulp can be cooked and eaten, while the released oil can enrich stews, sauces, porridges, and other preparations. Chemical residues may sometimes strengthen an identification of plant fats, although assigning degraded lipids specifically to oil palm is technically difficult without a strong diagnostic basis.

Unrefined red palm oil is intensely colored by carotenoids and contains vitamin E compounds, including tocopherols and tocotrienols. Like other pure fats, it is energy-dense and contains virtually no protein or carbohydrate. Its usefulness was not merely nutritional: oil carried flavor, changed texture, transferred heat efficiently, and concentrated calories in a portable product. Household production also transformed a highly perishable fruit into a material that could be stored and exchanged for longer, though premodern shelf life depended on moisture, cleanliness, and handling.

Later written accounts describe palm oil as an established West African cooking fat and traded commodity. From the early modern period, and especially during nineteenth-century industrial expansion, overseas demand grew for soap, candles, lubricants, and manufactured goods. Colonial commerce altered production and labor, sometimes through coercive systems. In the twentieth and twenty-first centuries, plantation cultivation spread particularly rapidly in Southeast Asia. Modern refining produces a pale, neutral fat used in frying, shortenings, confectionery, and processed foods, while removing much of red oil’s carotenoid color. Palm oil’s high yield per hectare helps explain its ubiquity, but plantation expansion has also driven deforestation, peat drainage, emissions, labor abuses, and habitat loss. Today’s commodity thus descends from an African food plant with deep local history, while operating within a radically different global system.

Historical context

Communities across West Africa combined farming, fishing, hunting, and the management of useful forest plants within environments that shifted from coast and rainforest to wooded savanna. Oil palm flourished particularly in humid and disturbed landscapes, including clearings around settlements. Long-distance exchange already moved valued stone, shells, and other materials across substantial distances, but there is no secure basis for treating palm oil itself as a large interregional commodity at exactly 3000 BCE. Elsewhere, cities and states were developing in Egypt and Mesopotamia, while West African food production followed distinct regional trajectories involving indigenous plants as well as changing cultivation practices.
