Poi is a soft food made by pounding cooked starchy material with water. In its best-known form, especially in Hawaiʻi, the starch is taro corm. Related Polynesian words and practices, however, have not always denoted exactly the same ingredient or consistency. For the Society Islands around 1200, transported taro and earth-oven cooking are well-supported parts of the food system, but no surviving text or excavated bowl directly demonstrates a standardized dish identical to modern Hawaiian poi. Its preparation at this date is therefore a reasonable reconstruction rather than a documented recipe.

Taro had accompanied Austronesian-speaking voyagers into the Pacific long before Eastern Polynesia was settled. Farmers propagated it vegetatively from corm pieces or shoots, placing it in damp gardens and, where landscapes permitted, irrigated plots. Because taro contains needle-like calcium oxalate crystals and other acrid compounds when raw or inadequately prepared, thorough cooking was essential. Corms could be baked or steamed in an earth oven lined with heated stones and vegetation. Once tender, they could be peeled and eaten directly or pounded, with water incorporated gradually to produce a paste ranging from firm to fluid.

Pounding changed more than texture. It made a dense crop easier to portion, combine with other foods, and consume by hand. Fresh paste was perishable, but in some later-documented Polynesian traditions it was intentionally held until lactic fermentation produced a sourer flavor and extended usability. Whether Society Island cooks in 1200 routinely fermented pounded taro cannot be established from present evidence. Breadfruit, yam, plantain, coconut, fish, and other foods also belonged to regional diets, so taro paste was one component of a diversified island food system rather than an isolated staple everywhere.

The dish’s historical importance lies partly in the labor and ecological knowledge behind it. Taro cultivation required planting material, freshwater management, repeated tending, and protection from storms or drought. Preparing a smooth paste added substantial cooking and pounding work, often organized within households and communities. Later ethnographic evidence across Polynesia associates starchy staples with hospitality, everyday meals, rank, and ritual, although those meanings cannot simply be projected unchanged into the medieval Society Islands.

Today, poi remains especially prominent as a Hawaiian cultural food, while pounded or mashed starch preparations elsewhere in Polynesia may use taro, breadfruit, banana, or other crops and may carry different names. Modern milling, refrigeration, packaged distribution, and commercial cultivation have altered production, yet the underlying process—fully cooking a transported tropical corm, pounding it, and adjusting it with water—preserves a defensible connection to pre-European Polynesian food technology.

Historical context

Eastern Polynesian communities were establishing or consolidating settlements across widely separated archipelagos reached by double-hulled or outrigger voyaging canoes. The Society Islands offered fertile volcanic soils but limited land, making managed tree crops, root gardens, fishing grounds, and freshwater especially important. Settlers had transported a deliberately selected food system—including taro, yam, breadfruit, banana, coconut, pigs, chickens, and dogs—across thousands of kilometres of open ocean. There was no writing system recording recipes; knowledge of cultivation, navigation, cooking, genealogy, and ceremony was transmitted orally and through practice.
