Port is a fortified wine made from grapes grown in Portugal’s demarcated Douro region and traditionally shipped through Porto and Vila Nova de Gaia. Its characteristic strength and, in many styles, sweetness come from adding grape spirit during fermentation. That intervention kills or inhibits the yeasts before they consume all the grape sugar. Modern port commonly reaches about 19–22% alcohol by volume, but the familiar process was not created in a single documented moment.
The year 1678 is best treated as a traditional commercial milestone connected with increasing English interest in Portuguese wine, not as a secure invention date. Political and military conflict repeatedly disrupted England’s access to French wine during the late seventeenth century, encouraging merchants to seek alternatives in Portugal. Stories that English traders discovered or invented port by adding brandy at a monastery near Lamego are repeated widely, but their details are difficult to verify. Early fortification may often have been intended to stabilize wine for transport, sometimes after fermentation, rather than consistently to preserve sweetness in the modern manner. The wine began with grapes from the hot, dry, steep-sided Douro valley. Fruit was crushed—historically often by foot in shallow stone lagares—and fermentation began with naturally present yeasts. In the method now regarded as traditional, strong grape spirit is added while substantial sugar remains. The young fortified wine is then separated from its solids and matured. Ruby styles retain deep color and vigorous fruit through relatively protected aging; tawny ports develop nutty, oxidative qualities through longer wood aging. Vintage port spends comparatively little time in wood before extended bottle maturation. White and, much later, rosé ports broadened the category.
Port’s identity was shaped as much by regulation and trade as by cellar technique. In 1756 the Portuguese state established one of the earliest formally delimited and regulated wine regions in the Douro, responding to disputes over quality, adulteration, prices, and merchant power. British-owned or British-connected shipping houses became especially prominent, while growers and laborers remained tied to demanding vineyard work and volatile markets.
Today port remains both a protected regional product and a living family of wines rather than one fixed recipe. Mechanized crushing and temperature control now coexist with foot-treading and stone lagares at some estates. The surviving drink embodies a long transformation: ordinary Douro wines entered export commerce, fortification practices became standardized, and government regulation turned a loosely defined trade wine into a geographically protected global commodity.

Historical context
European maritime trade was being redirected by recurrent warfare, mercantilist tariffs, and expanding Atlantic commerce. England imported substantial quantities of wine but periodically lost reliable access to French supplies, making Portuguese ports commercially valuable. The Douro vineyards lay far inland along a difficult river route, and wine traveled in casks toward the Porto export zone before ocean shipment. Portugal retained a global trading network extending to Brazil, Africa, and Asia, while distilled grape spirit was already available as a tool for strengthening and stabilizing wine. The Douro was not formally demarcated until 1756, decades after the traditional 1678 milestone.
