Sturgeon inhabited the Volga, Ural, and other rivers entering the Caspian, where enormous migratory fish could supply flesh, fat, and roe. Written evidence supports long-distance exchange across the Volga-Caspian world, while archaeological fish bones demonstrate exploitation of sturgeons in relevant regions. Connecting those broad bodies of evidence to a specifically salted-and-smoked product in exactly 900 is a reconstruction rather than a directly recorded event. Roe was also used in Eurasia long before modern branded caviar, so preserved flesh should not be described as simply preceding caviar in a clean historical sequence.

The underlying preservation logic remains familiar. Historical context

The Volga formed a major north–south corridor between forest-zone communities and the Caspian and Islamic worlds. Volga Bulgaria was emerging as a commercial power, Khazar authority still shaped parts of the lower river, and Rus' trading networks connected northern waterways with the Black Sea and Volga routes. Islamic silver coins traveled thousands of kilometers into eastern and northern Europe. Boats, seasonal river travel, salt, drying, and cool-weather storage made bulky foods more mobile, but journeys remained slow and spoilage risk was constant.
