Sauerkraut is cabbage preserved by lactic-acid fermentation. The familiar form consists of finely shredded white or headed cabbage mixed with salt, compressed, and kept beneath the liquid drawn from its own tissues. Naturally present lactic-acid bacteria consume cabbage sugars and create acids that lower the pH, discourage many spoilage organisms, and give the food its characteristic sourness. The method preserves a bulky autumn crop into winter without requiring sugar, vinegar, or continuous heating.
Fermented vegetables long predate sauerkraut, but that broad history does not establish a single ancient origin for the specifically German-named food. Cabbage cultivation and salting were known in Europe for centuries, while clearly recognizable sauerkraut belongs to the documentary world of early modern German-speaking Central Europe. An exact invention around 1500 cannot be demonstrated. Popular claims that Mongols or Chinese workers directly introduced sauerkraut to Europe are repeated widely but lack a securely documented chain of transmission.
Traditional production is deceptively simple. Outer leaves and damaged portions are removed, the cabbage is sliced, and salt is distributed through the shreds. Kneading or tamping ruptures cells and releases juice. Packed firmly into a barrel or ceramic crock, the cabbage is weighted so that air-exposed pieces do not mold. Salt concentration, temperature, cabbage composition, and fermentation time all affect texture and flavor. A modern household proportion of roughly 2–3% salt by cabbage weight is common, although historical practice was not necessarily standardized. Fermentation may take several weeks, with a succession of microorganisms producing an increasingly acidic environment.
Sauerkraut became especially useful where cool seasons favored cabbage and winters restricted fresh produce. It could be eaten uncooked, rinsed, or cooked with fats, onions, meat, sausages, or wine. These combinations varied by region and household means. In Alsace, fermented cabbage eventually became the foundation of choucroute garnie, served with assorted pork products. German-speaking migrants also carried sauerkraut traditions abroad, where the food acquired new associations and locally available accompaniments.
Industrial manufacture introduced mechanical shredding, controlled fermentation, sealed packaging, pasteurization, and refrigeration. Pasteurized shelf-stable sauerkraut retains acidity and fiber but no longer contains a living fermentation community; refrigerated, unpasteurized versions may retain viable bacteria, though their abundance is variable. Modern products can also differ greatly in sodium. Sauerkraut’s lasting importance lies less in any single origin story than in its economical preservation system: salt, exclusion of air, and microbial acidification transformed a seasonal cabbage harvest into a durable food whose descendants remain ordinary components of Central European and diasporic cooking.

Historical context
Central Europe was a patchwork of territories within the Holy Roman Empire, and most people depended directly on seasonal agriculture. Cabbage and other hardy garden crops helped bridge winters when fresh vegetables were scarce. Salt moved through substantial regional trade networks from Alpine and other European deposits, while barrels and ceramic crocks supported household preservation. European contact with the Americas was beginning to transform diets, but sauerkraut’s essential ingredients and fermentation method were already entirely Old World.
