Scotch whisky’s earliest widely accepted documentary landmark is a terse entry in the Scottish Exchequer Rolls for 1494. Malt was supplied to Friar John Cor “wherewith to make aqua vitae,” the Latin expression for “water of life.” Because the raw material was malt and the purpose was distillation, historians reasonably identify the product as an ancestor of Scottish whisky. The entry proves neither that Cor invented it nor that distilling began in that year; established equipment and practical knowledge must already have existed.
The spirit Cor made was probably unlike modern Scotch. Malted grain would have been crushed, mixed with water, and allowed to ferment before the resulting liquid was heated in a still. Alcohol-rich vapour condensed into a stronger drink. The account does not preserve his recipe, still design, number of distillations, alcoholic strength, or treatment after distillation. Most importantly, it says nothing about prolonged maturation in oak. The result was therefore likely a clear malt spirit, potentially consumed relatively young and perhaps used medicinally or within elite households, although those particular uses are reconstruction rather than facts supplied by the entry.
Modern Scotch begins with the same basic sequence—mashing, fermentation, and distillation—but centuries of technical practice and regulation separate it from Cor’s aqua vitae. Malt Scotch is made entirely from malted barley and commonly distilled in copper pot stills. Grain Scotch may incorporate other cereals and is generally associated with continuous distillation. After distillation, the spirit must mature in oak casks in Scotland for at least three years to bear the protected name. Longer ageing and casks previously used for products such as bourbon or sherry can contribute colour and aromas, but age alone does not determine quality.
By the early modern and industrial periods, whisky had moved beyond small-scale production into a contested economy of licensed distillers, illicit stills, excise officers, merchants, and blenders. Nineteenth-century continuous stills made lighter grain spirit at scale, while blending it with characterful malt whisky helped create consistent products for expanding markets. Railways, steamships, glass bottles, and international trade then carried Scotch far beyond Scotland.
Today Scotch includes single malt, single grain, blended malt, blended grain, and blended Scotch whisky. It is served neat, with water, over ice, or in mixed drinks. Its global reputation rests on regional skill, regulated production, and maturation rather than on an unchanged medieval recipe. The 1494 entry matters because it anchors Scottish grain distillation in a securely dated record while leaving the beverage’s deeper beginnings—and much of its early character—unknown.

Historical context
Scotland was ruled by James IV, whose court promoted administration, shipbuilding, learning, and Renaissance culture. The country remained overwhelmingly rural, with grain harvests fundamental to taxation and subsistence. Barley and oats were better suited than wheat to many Scottish environments. Distillation knowledge had circulated through medieval medical and scholarly traditions, but stills were costly equipment and distilled drink was not yet an everyday mass commodity. Across the Atlantic, Columbus’s voyages had recently initiated sustained contact between Europe and the Americas, although the 1494 Scottish account has no demonstrated connection to that exchange.
