Airag is Mongolia’s fermented mare’s-milk drink: tart, faintly sparkling, and usually mildly alcoholic. It belongs to a wider Inner Asian family often called kumis or koumiss outside Mongolia. The practice is closely fitted to mobile pastoralism. Mares produce milk during the warm season, and a foal must normally stimulate milk flow before a herder milks its mother. Each milking yields comparatively little, so milk is collected repeatedly from several animals.

Fresh mare’s milk is added to an active batch containing lactic-acid bacteria and yeasts. In the traditional khokhuur method documented in modern Mongolia, the vessel is made from cowhide and the liquid is stirred or churned many times. Fermentation converts part of the abundant lactose into lactic acid, carbon dioxide, and ethanol. The result is thinner than yogurt and more perishable than cheese. Continuous additions of milk and repeated agitation keep the culture active, but alcohol, acidity, and microbial composition vary with temperature, vessel, starter, timing, and household practice.

Fermented mare’s milk was plainly important in the medieval Mongol world. Thirteenth-century outside observers described the drink—usually under forms of the name cosmos or kumis—and its preparation among Mongols. Such accounts support its presence during the imperial period, although they do not establish that every detail of today’s khokhuur technique was practiced in exactly the same form in 1200. The drink itself is probably older than the Mongol Empire, since horse pastoralism and fermented milks had long histories across the Eurasian steppe, but a precise invention date or single birthplace is not known.

Airag supplied fluid, some protein, fat, milk sugars, minerals, and fermentation products during the summer grazing season. Fermentation also transformed highly perishable milk and reduced some of its lactose, though it did not make the beverage indefinitely storable or universally safe. Its production demanded access to lactating mares, healthy foals, pasture, repeated labor, and a maintained starter. These requirements made it an expression of pastoral wealth and skill as well as food.

Traditionally, airag is served in bowls to household members and guests. Drinking can mark hospitality, seasonal gatherings, weddings, festivals, and other ceremonies; it may also be offered or sprinkled in acts of blessing. Participation and serving etiquette vary by community and occasion, so no single ritual pattern applies everywhere.

Modern airag remains strongly associated with Mongolian identity and summer life. Some households continue hide-vessel fermentation, while others use wooden, plastic, or metal containers; dairies also sell bottled products. Container changes can alter aeration and microbial ecology, while refrigeration and commercial distribution extend availability beyond the immediate herding camp. The modern drink therefore preserves a pastoral fermentation principle without being technologically unchanged from its medieval forms.

Historical context

Temüjin was consolidating alliances and defeating rivals on the Mongolian steppe; he would be proclaimed Chinggis Khan in 1206. Pastoral households moved livestock among seasonal grazing grounds, relying on horses for transport, warfare, meat, and milk. Within decades, Mongol political expansion would connect routes extending thousands of kilometers across Eurasia. Written descriptions of fermented mare’s milk become particularly detailed through thirteenth-century travelers, slightly later than the card’s exact date.
