Amazake is a thick, sweet Japanese rice drink made by allowing enzymes from rice kōji—rice cultivated with Aspergillus oryzae—to transform cooked starch into sugars. Despite a name often translated as “sweet sake,” the standard kōji form need not undergo alcoholic fermentation and usually contains negligible alcohol. Its texture ranges from a smooth beverage to a spoonable mixture in which softened grains remain visible.
A Japanese court chronicle completed in 720 mentions amanotamuzake, a sweet alcoholic or rice-based preparation often associated with amazake’s early history. The identification is plausible but not conclusive: the text does not provide a modern recipe, and changing terminology makes a direct equivalence uncertain. What can safely be said is that early Japan possessed rice cultivation, brewing practices, and molded-grain fermentation traditions capable of producing sweetened rice preparations. Clearer evidence for amazake as a recognizable named drink comes from later periods rather than from a securely documented invention around 700.
In the familiar kōji method, rice is steamed or boiled, cooled, mixed with rice kōji and water, and kept warm. Modern makers commonly hold it near 55–60°C for several hours. At this temperature, kōji-derived amylase enzymes break starch into glucose and other sugars while vigorous yeast fermentation is discouraged. Historical households lacked thermostats, so exact temperatures and timings are modern specifications rather than directly documented ancient practice. The mixture may be eaten as it is, diluted, strained, or blended.
A second form, associated with the sake-brewing economy, uses sake kasu—the pressed lees remaining after sake production—diluted with water and commonly sweetened. It is nutritionally and chemically distinct from kōji amazake and can retain measurable alcohol. Its emergence cannot simply be projected back onto the earliest references to sweet rice drinks.
By the Edo period, amazake was familiar enough to be sold by street vendors. Although now strongly associated with cold weather and New Year visits to shrines, it was also a celebrated summer refreshment; “amazake” remains a summer seasonal word in traditional Japanese poetry. Its readily available sugars made it an energy-dense drink, though modern claims that it functioned as an “intravenous drip to drink” are promotional analogy, not historical medical evidence.
Contemporary amazake is sold chilled, heated, concentrated, blended smooth, or flavored with ginger and fruit. Commercial production has standardized temperature control and packaging, but the defining transformation remains old: cultivated mold supplies enzymes that release sweetness already stored in rice. Amazake therefore preserves an important principle of East Asian food technology—using microbial cultures not merely to ferment food, but to unlock grain starch and reshape flavor, texture, and digestibility.

Japan was being reorganized as a centralized state under the ritsuryō legal system; the Taihō Code was promulgated in 701, and the permanent capital at Heijō-kyō, present-day Nara, followed in 710. Wet-rice agriculture supported taxation and court provisioning, while technologies, texts, Buddhism, and administrative models traveled through connections with Tang China and the Korean peninsula. The political and ceremonial center lay in the Kinai region around Nara and Osaka, not at present-day Tokyo. Brewing and molded-grain processing were established, but surviving texts rarely provide enough procedural detail to reconstruct individual beverages exactly.
