Cashew wine begins not with the familiar curved nut but with the cashew apple, the swollen, juicy structure from which the nut hangs. The apple is edible, aromatic, sugar-rich, and notably astringent, but it bruises rapidly and deteriorates soon after harvest. Fermentation offers a practical answer: juice that cannot travel far can become a drink with a longer useful life and local exchange value.

Cashew originated in tropical South America. Portuguese maritime networks carried it to parts of Africa and Asia from the sixteenth century onward, although the timing and route of its establishment in what is now Guinea-Bissau are not securely defined. The plant was valued partly because it tolerated tropical conditions and could be planted on poor or erosion-prone ground. To make vinho de caju, ripe apples are separated from the nuts, washed when water is available, then crushed or pressed. Straining removes fibrous pulp and debris. Yeasts naturally present on fruit and equipment can initiate fermentation, while some controlled production uses an added culture. As yeast consumes sugar, it produces ethanol, carbon dioxide, and a range of aromatic compounds. The liquid may then be transferred away from sediment—a process known as racking—and consumed young. Household methods can yield a cloudy, lightly alcoholic drink, whereas managed processing may include clarification, controlled fermentation, bottling, or pasteurization. Strength, sweetness, acidity, and safety consequently vary substantially.

Cashew wine matters because commercial cashew systems commonly recover only the nut. Apples are bulky, fragile, seasonal, and often left beneath trees even though they contain fermentable sugars and, when fresh, abundant vitamin C. Turning them into wine can diversify household products and reduce some harvest waste, but it does not erase the vulnerabilities of an export economy heavily dependent on raw nuts and fluctuating international prices.

Today cashew-apple beverages range from informal young ferments to clarified commercial wines, juices, syrups, and distillates. Their defensible historical connection is not an unchanged recipe reaching back to 1800, but the enduring preservation logic of fermentation: transforming a quickly spoiling local fruit into a storable, saleable, and socially shared drink.

Historical context

Portuguese settlements such as Cacheu and Bissau formed small coastal nodes in an Atlantic trading world, while African political communities retained substantial authority across the surrounding region. Cashew had already been transported beyond its Brazilian homeland through Portuguese imperial networks, but its precise establishment and culinary use in Guinea-Bissau remain poorly dated. The country’s later dependence on cashew-nut exports should not be projected backward to 1800; large-scale production became economically decisive much later.
