Cava

Cava is a Spanish sparkling wine made by carrying out the bubble-producing second fermentation inside the bottle. Its conventional starting point is 1872, when Josep Raventós of the Codorníu wine family is credited with producing commercially significant bottle-fermented sparkling wine at Sant Sadurní d’Anoia in Catalonia. That date marks an important early production milestone, not the immediate appearance of the modern regulated category. Spanish sparkling wines had varied names and practices, while “Cava” became their defining legal and commercial identity only much later in the twentieth century.

The classic Catalan grapes are Macabeo, Xarel·lo, and Parellada. Macabeo can supply fruit and floral character, Xarel·lo acidity and structure, and Parellada delicacy, although their effects vary with site, harvest, and blending. Modern regulations permit additional varieties, including Chardonnay and Pinot Noir, while some producers emphasize native grapes. For rosé versions, approved dark-skinned grapes contribute color and flavor.

Production begins with grapes harvested for freshness and acidity, commonly earlier than fruit intended for still wine. Gentle pressing yields juice that undergoes a first fermentation, producing a dry base wine. Different lots may then be blended. The producer adds yeast and a measured sugar solution before sealing the wine in pressure-resistant bottles. A second fermentation produces alcohol and carbon dioxide; because the gas cannot escape, it dissolves into the wine. Aging on the dead yeast cells, or lees, can introduce creamy texture and aromas resembling bread or toast.

The sediment must eventually be moved toward the neck by riddling. Traditionally, workers turned and tilted each bottle by hand; mechanized cages now perform much of this repetitive labor. During disgorgement the collected deposit is expelled, after which a dosage may adjust sweetness. The bottle is then closed with a mushroom-shaped cork and wire cage. Styles range from bone-dry brut nature to sweeter expressions, with aging rules and producer choices creating substantial differences in complexity and price.

Cava developed within a nineteenth-century wine economy transformed by rail transport, industrial bottle manufacture, expanding urban markets, and vineyard disease. Phylloxera devastated Catalan vines after reaching the region, forcing replanting on resistant American rootstocks and helping alter vineyard composition. Sparkling-wine production nevertheless became concentrated around Sant Sadurní d’Anoia, where deep cellars, specialized labor, and established firms supported growth.

Today cava is produced within a legally delimited, geographically dispersed appellation, though Catalonia remains its principal center. It is poured at celebrations but also served with meals, where acidity and carbonation suit fried foods, seafood, cured meats, and other rich dishes. Its modern form joins regional grapes and cellar knowledge to a method adapted from earlier European bottle-fermented sparkling wine rather than representing an independently invented technique.

Historical context

Catalonia was industrializing rapidly, with Barcelona developing into a major manufacturing and commercial city and railways connecting inland producers to urban and export markets. European wine regions were being disrupted by phylloxera, an American vine pest that reached France in the 1860s and Catalonia later in the century. Stronger glass bottles, standardized corks, and improved control of bottle fermentation made sparkling-wine production more commercially practical, although breakage, sediment removal, and long cellar aging still demanded capital and skilled labor.
