Lait caillé is milk transformed by lactic-acid bacteria into a tart, thickened food. In Senegal it is eaten by itself and, especially, with millet preparations such as couscous, porridge, or thiakry, a sweetened mixture of millet granules and cultured milk. As acidity rose, milk proteins coagulated and the liquid acquired its characteristic tang. The fermented milk might then be stirred or whisked to make it more uniform. Fermentation slowed some spoilage and created a desirable flavor, but it did not sterilize raw milk; vessel hygiene, animal health, temperature, and fermentation speed all affected safety.

Commercial dairies and household cooks gained access to pasteurized milk, imported or locally processed milk powder, defined starter cultures, refrigeration, plastic packaging, and added sugar. These methods produced a more predictable texture and allowed vendors to sell chilled portions, but they also widened the nutritional range. Unsweetened whole-milk lait caillé resembles plain yogurt, while heavily sweetened versions can contain substantially more carbohydrate and energy.

The dish remains important because it joins two major Sahelian food systems: pastoral dairying and the cultivation of drought-tolerant millet. Modern packaged forms do not replace household or artisanal production; they coexist with it. Historical context

Dakar and the Senegalese coast were being drawn more tightly into the French colonial economy through railways, ports, and expanding groundnut exports. Most of the western Sahel nevertheless remained rural, and cattle herding, seasonal mobility, millet cultivation, and local markets structured everyday food supplies. Mechanical refrigeration was scarce outside ships, commercial facilities, and elite urban settings, so fermentation remained a practical way to extend milk’s usefulness in a hot climate. Dakar became the capital of French West Africa in 1902, accelerating the urban markets that would later support packaged and chilled dairy foods.
