Kiselo mleko—literally “sour milk”—belongs to a broad Balkan family of cultured dairy foods rather than to a securely documented invention made in a single year or town. In Serbian usage, the name commonly denotes milk fermented until pleasantly acidic and softly set. It may be eaten with a spoon, whisked smoother, or occasionally diluted for drinking. Calling it exclusively a drink therefore oversimplifies a food whose consistency ranges from thick yogurt-like curd to a pourable beverage.

Traditional production addressed a practical problem: fresh milk spoiled quickly without refrigeration. A household warmed newly obtained cow’s, sheep’s, or goat’s milk, allowed it to cool to a culture-friendly temperature, and inoculated it with a little successful sour milk from an earlier batch. Naturally assembled lactic-acid bacteria converted some lactose into lactic acid. As acidity increased, milk proteins coagulated, producing a tart, thickened food. Exact organisms, temperatures, and timings were not standardized, and historical batches would have varied with season, animal, vessel, cleanliness, and the resident microbial community.

In a household kitchen, successful preparation depended more on experience than measurement. The vessel was kept warm and undisturbed until the milk set, then moved to a cooler place. The product could accompany bread, cornmeal preparations, pies, or other savory foods. Such pairings are consistent with later regional food practice, but a specific Serbian menu for precisely 1800 is not established by the supplied dating. Fermentation extended usability and changed flavor and texture, but it was not sterilization: contaminated milk or dirty equipment could still transmit disease.

The food’s significance lies in its economical conversion of perishable milk into something more stable, digestible for some consumers, and easy to reproduce through back-slopping. Fermentation reduces lactose to a degree, although kiselo mleko is not lactose-free. Its acidity also inhibits many spoilage organisms. These advantages mattered in mixed farming and pastoral economies where milk production was seasonal and rapid household consumption was essential.

During the late nineteenth and especially the twentieth century, microbiology, pasteurization, refrigeration, and industrial starter cultures transformed production. Commercial dairies increasingly used selected cultures and controlled temperatures, producing safer and more uniform acidity and texture, usually from cow’s milk. Refrigerated distribution weakened the old dependence on a continuously maintained household culture. Modern kiselo mleko consequently overlaps with regional styles of yogurt, while retaining a distinct name and local associations. The historical continuity is the technique—acid fermentation of milk—not proof that every modern formulation or bacterial strain descends unchanged from an 1800 recipe.

Estimated for unsweetened cultured whole cow's milk. Sheep's milk, goat's milk, reduced-fat milk, dilution, whey separation, and added salt or water can materially change the values. Historical formulations were not standardized.

Historical context

The territory around Belgrade remained under Ottoman rule, while the First Serbian Uprising was only a few years away in 1804. Most people in the region lived in rural communities, and animal husbandry supplied milk under strongly seasonal conditions. Mechanical refrigeration, pasteurization, and laboratory-selected dairy cultures did not yet exist; household fermentation, immediate consumption, and cool storage in cellars or similar spaces were the practical tools available for managing perishable milk.
