Reconstruction
Doro is a Zimbabwean term, especially in Shona usage, for beer that may include the thick, opaque sorghum-based drink familiar across southern Africa. It is not a creation of 1900: African grain-beer traditions are considerably older, although assigning a precise beginning to this particular name, recipe, or national form is not possible. Around the turn of the twentieth century, household brewing continued alongside colonial economic changes that would eventually encourage standardized commercial opaque beer.
Traditional recipes vary by community and brewer. Sorghum is commonly germinated and dried to make malt, whose enzymes can convert cooked grain starch into fermentable sugars. A separate portion of sorghum or maize meal may be mixed with water, soured, cooked into a mash, and combined with malt. Yeasts produce alcohol and carbon dioxide, while lactic-acid bacteria contribute the characteristic acidity. Fermentation can arise from organisms on ingredients and equipment, from retained beer or sediment, or from another starter; deliberate inoculation with a uniform culture is more characteristic of controlled production than of every household method.
The finished beer is cloudy because it is neither fully clarified nor filtered. Suspended grain particles give it body and some protein, minerals, and carbohydrate absent from many clear beers. It is generally mildly alcoholic, but strength varies with grain proportions, fermentation time, temperature, and dilution. Because it remains microbiologically active, it is made for prompt consumption rather than prolonged storage. Its sourness, continuing fermentation, and short shelf life are defining practical features.
Doro has served purposes beyond everyday refreshment. Depending on local custom, grain beer may be offered to guests, shared after communal labor, sold for household income, or consumed at weddings, funerals, rain-related observances, and other gatherings. Brewing knowledge has often been associated with women, though production and authority differ among communities. Beer can reinforce hospitality and reciprocity, while access, intoxication, and the control of brewing revenues can also express unequal gender and economic relationships.
During the twentieth century, municipal regulation, migrant labor, taxation, and commercial brewing reshaped southern African beer culture. Industrial producers adapted short-fermented opaque beer to larger batches, selected cultures, and regulated packaging and distribution. Maize became a frequent adjunct or base alongside sorghum. Modern commercial examples are consequently related to, but not identical with, diverse household beers. Doro remains a living category rather than a single fixed formula: its continuity lies in malted grain, sour-alcoholic fermentation, opacity, freshness, and social sharing, not in an unchanged standardized recipe.

Historical context
The territory now called Zimbabwe was governed through the British South Africa Company as Southern Rhodesia. Colonial taxation, land appropriation, rail construction, mines, and expanding migrant labor markets were beginning to redirect grain, labor, and drinking practices. Most Africans still lived in rural farming communities, where sorghum and millets remained important despite the growing cultivation of maize. The railway had not yet reached Victoria Falls—it arrived in 1904—and commercial opaque-beer industries developed mainly later in the twentieth century.
