Ice cider, or cidre de glace, is a sweet alcoholic drink made by concentrating apple sugars through freezing before fermentation. It emerged commercially in Quebec around the turn of the 1990s, when producers adapted the underlying logic of ice wine to apples and to the province’s reliably cold winters. Christian Barthomeuf is widely credited with important early experiments during the winter of 1989–90, but the product’s commercial emergence involved several producers and unfolded over subsequent years rather than at a single precisely documented moment.
Two principal methods developed. In cryoconcentration, producers press apples in autumn, expose the juice to natural winter cold, and collect the sugar-rich liquid that separates as the frozen mass gradually thaws. In cryoextraction, apples freeze outdoors—sometimes remaining on the tree well into winter—and are pressed while frozen. Because much of their water stays behind as ice, either process yields a must with concentrated sugar, acidity, aroma, and flavor. The second method is especially dependent on weather and sound fruit, while the first offers somewhat greater control.
Yeast ferments this concentrated must slowly at low temperatures. Fermentation may cease naturally as rising alcohol, high sugar, and difficult conditions inhibit the yeast, or producers may intervene through cooling and filtration. Considerable residual sugar remains, balanced in successful examples by apple acidity. The finished cider is commonly golden to deep amber, with flavors described in terms of baked or fresh apple, honey, caramel, spice, and dried fruit, although varieties, method, vintage, and maturation produce substantial differences. It is usually served chilled in a small dessert-wine-sized pour, alone or alongside cheeses, foie gras, apple desserts, or other rich foods.
Ice cider requires far more apples per bottle than ordinary cider because much of the original water is discarded as ice. This low yield, long winter processing, and climatic risk help explain its premium price. Quebec producers transformed those constraints into a regional identity, and production standards eventually formalized requirements concerning local apples, natural cold, sugar concentration, fermentation, and alcohol. Such rules distinguish genuine ice cider from beverages sweetened after ordinary fermentation or concentrated by unrelated industrial methods.
The drink has since been produced elsewhere in cold apple-growing regions, but it remains particularly associated with Quebec. Its history illustrates a modern form of culinary adaptation: an established fermentation tradition combined with cold-climate concentration to create a new specialty. It also faces a contemporary vulnerability. Warmer, less predictable winters can shorten freezing periods and make natural cryoextraction more difficult, tying the future of the style directly to changing winter conditions.

Quebec had a population of roughly seven million and was predominantly urban, yet commercial orchards remained important in the province’s southern apple-growing districts. The North American specialty-food and estate-cidery sectors were expanding, while controlled fermentation, stainless-steel equipment, filtration, and modern bottling allowed small producers to market consistent premium beverages. Ice wine was already demonstrating that severe winter cold could support a valuable regional product rather than functioning only as an agricultural risk.
