Joala is a cloudy fermented cereal beer associated with Basotho household life in Lesotho and neighboring parts of southern Africa. Brewers combine cereal material and water through staged mixing, cooking, and cooling. Heating gelatinizes starch and reduces some microbial hazards, although ingredients or starter material introduced afterward can add a new community of microorganisms. Lactic-acid bacteria sour the liquid, while yeasts convert available sugars into alcohol and carbon dioxide. Fermentation may depend on organisms retained in vessels, carried by malt and ingredients, or transferred from an earlier batch. Describing this simply as a single “local culture” is convenient but may conceal a variable mixed fermentation rather than a standardized starter.

Joala demonstrates how fermentation preserves grain temporarily, changes flavor and digestibility, and converts technical knowledge into social value. It remains a living food practice rather than a fixed historical recipe, and responsible interpretation must acknowledge both its cultural importance and the health consequences possible from excessive alcohol intake or poorly controlled sanitation.

Historical context
