Kumis is a fermented drink made principally from mare’s milk, associated especially with Turkic- and Mongolic-speaking pastoral societies of the Eurasian steppe. Lactic-acid bacteria sour the milk while yeasts generate carbon dioxide and a modest amount of alcohol. Fresh kumis is consequently tart, lightly sparkling, and usually much thinner than yogurt. Its composition varies with the milk, starter organisms, fermentation time, temperature, and whether the batch is consumed young or allowed to become more acidic and alcoholic.

Ancient evidence requires careful wording. In the fifth century BCE, Herodotus reported that Scythians milked mares and agitated the milk before separating a prized upper portion. His account directly supports specialized mare-milk processing north of the Black Sea, but it does not unambiguously document the complete fermentation process now called kumis. Medieval travelers provide clearer descriptions of sour or intoxicating fermented mare’s milk among steppe peoples. The exact place and date at which kumis first emerged are therefore unknown; an exact origin at modern Bishkek in 500 BCE cannot be demonstrated.

Traditional production took advantage of mare’s milk, which contains relatively little fat and comparatively abundant lactose. Fresh milk was added to a vessel carrying mature kumis or another active culture. The liquid was repeatedly stirred, beaten, or shaken, sometimes in a leather bag and sometimes in a wooden container. Agitation mixed successive milkings with the starter and supplied oxygen that could influence yeast activity. Fermentation converted only part of the lactose, so the finished drink retained carbohydrate alongside lactic acid and alcohol. It was normally consumed fresh because continued fermentation made it progressively sharper and because traditional production did not render it shelf-stable.

Kumis mattered because milking mares transformed living herds into a recurring food source without slaughter. Yet mares yield milk only during a limited lactation season, and obtaining it requires frequent handling while leaving enough for the foal. Production therefore embodied skilled labor, herd management, and seasonal abundance. Offering kumis became a recognizable act of hospitality and could also mark communal gatherings, rank, or celebration, although practices differed among societies and periods.

Kumis remains important in Kazakhstan, Kyrgyzstan, Mongolia, and neighboring regions, under related but not identical names and traditions. Some modern producers use controlled cultures, refrigerated distribution, or mechanized agitation; products made from cow’s milk may be marketed as approximations where mare’s milk is scarce. These adaptations broaden availability but alter the historical drink. Contemporary kumis is best understood not as an unchanged survival from a single ancient recipe, but as a continuing family of pastoral fermentation practices whose earliest history is only partly visible.

Historical context

Much of the Eurasian steppe was occupied by mobile or seasonally mobile pastoral communities whose horses supported transport, herding, warfare, and exchange across great distances. Greek colonies bordered the northern Black Sea, creating points of contact between literate Mediterranean observers and peoples whom Greek writers grouped under names such as Scythians. Herd products—including meat, milk, hides, and fermented dairy foods—helped communities exploit grasslands poorly suited to crop farming. Written evidence is geographically uneven: a Greek description of Scythian mare milking does not establish that an identical beverage was being made throughout Central Asia.
