Lambrusco is a family of red and rosé wines made from several grape varieties bearing the Lambrusco name, rather than a single uniform drink. Lambrusco is traditionally served young and cool. Dry versions are particularly suited to Emilia’s rich foods: salumi, mortadella, pork sausage, Parmigiano Reggiano, filled pasta, and boiled meats. Acidity and carbonation cut through fat and salt, making the pairing functional as well as customary.
During the later twentieth century, large quantities of sweet, inexpensive Lambrusco were exported, especially to the United States. That success made the name internationally familiar but narrowed its image to sugary red fizz. Contemporary production remains diverse. Protected regional appellations, estate bottlings, drier styles, and renewed interest in bottle fermentation now coexist with mass-market sweet wine. The defensible connection between medieval and modern Lambrusco is therefore regional viticulture and an old grape name—not an unchanged recipe or securely continuous sparkling technique.

Historical context
Bologna was one of Europe’s larger cities, probably holding roughly 40,000–60,000 people before the Black Death, and its university attracted scholars from across Latin Christendom. Northern Italy was divided among communes and lordships linked by dense markets and river routes. The Po Valley combined grain cultivation, livestock husbandry, orchards, and vineyards; wine generally traveled in barrels, although imperfect sealing and spoilage limited long-distance movement. Glass bottles existed, but pressure-resistant bottles, dependable closures, and controlled sparkling-wine production were not yet available.
