Masato names a family of fermented drinks rather than one fixed recipe. In Amazonian parts of Peru, Colombia, Ecuador, and neighboring regions, the best-known form begins with cassava, also called manioc or yuca. Related drinks and foods may carry other names, while “masato” can refer to rice- or fruit-based preparations outside this particular setting. Its exact origin cannot be assigned securely to the year 1500. Cassava had been cultivated in tropical South America for millennia before European contact, and fermented cassava beverages are generally understood as Indigenous traditions, but direct evidence identifying pre-contact masato by name is limited.

To prepare cassava masato, cooks peel and thoroughly cook suitable roots, then pound or mash them. Water turns the dense starch into a pourable mixture. In some documented communities, a portion of cassava is chewed and returned to the vessel: enzymes in saliva begin breaking starch into sugars that microorganisms can ferment. That striking technique is not universal. Other batches rely on microorganisms carried by vessels, utensils, ingredients, the surrounding environment, or retained material from earlier fermentation.

Yeasts and lactic-acid bacteria can make the mash tart, aromatic, and mildly alcoholic within one or several days, although strength varies greatly with dilution, temperature, time, and available sugar. Fresh or briefly fermented masato may function almost as liquid food, retaining substantial cassava starch. Longer fermentation can produce a thinner, sharper, and more intoxicating drink. Cassava processing is also a safety practice: varieties differ in cyanogenic potential, and peeling, cooking, grating, pressing, soaking, or fermenting may be combined according to local knowledge. Boiling alone should not be treated as an adequate universal method for every bitter cassava variety.

Ethnographic accounts show masato embedded in hospitality, household provisioning, work gatherings, exchange, and ritual life. Women commonly hold central responsibility for cultivating, processing, and serving it in many communities, though labor arrangements differ. Offering a bowl can establish welcome and reciprocity; producing a large quantity demonstrates agricultural resources, time, and skill. These meanings are more specific than simply calling it “beer.”

The Columbian Exchange transformed cassava’s global geography: Portuguese and other Atlantic networks carried the crop to Africa, where it became a major staple. That movement does not establish a direct lineage from Amazonian masato to African cassava ferments. Within South America, colonization, missions, wage labor, markets, and manufactured ingredients changed local production unevenly. Contemporary masato may be made with added sugar, commercial yeast, blenders, or refrigeration, while household and communal versions preserve older principles of cooked starch, microbial fermentation, and social sharing.

Historical context

Cassava was already an ancient domesticated crop sustaining communities across tropical South America. Amazonia was not an untouched wilderness: river corridors connected settlements and exchange networks, while generations of cultivation and burning had created managed forests and fertile anthropogenic soils in some areas. Europeans reached the Caribbean coast of present-day Colombia around the turn of the sixteenth century, but control of the Amazonian interior remained limited and uneven. During the following century, Atlantic trade carried cassava planting material to Africa, beginning the crop’s transformation into a staple far beyond its American homeland.
