Mijiu, literally “rice alcohol” or “rice wine,” is not one fixed ancient recipe but a broad Chinese category of alcoholic drinks made principally from rice. Some forms are cloudy, sweet, and lightly fermented; others are pressed, clarified, matured, and strong enough to resemble other wines in alcohol content. The term’s modern breadth matters: ancient evidence establishes a long Chinese tradition of fermented grain beverages, but it does not show that every early drink was identical to present-day mijiu.
Around 1000 BCE, communities in China were already brewing alcoholic grain drinks for consumption and ritual use. Today rice wine may be served as a beverage or used to season marinades, sauces, soups, and braises. That continuity is technological rather than proof that one unchanged recipe has survived from 1000 BCE.

Historical context
The Western Zhou dynasty controlled a network of regional centers after its conquest of Shang power around the mid-11th century BCE. Bronze ritual vessels made food and alcohol conspicuous in elite ceremonies, while inscriptions recorded offerings and political relationships. Northern agriculture depended heavily on broomcorn and foxtail millet; wet-rice cultivation was more prominent in the Yangtze basin and southern landscapes. Grain, livestock, textiles, and prestigious objects moved through tribute and exchange networks, but neither China’s population nor the scale of rice-wine production can be quantified securely for this date.
