Prosecco is now best known as a light, usually sparkling wine from northeastern Italy, but the date 1754 marks a written appearance of its name rather than the birth of the modern drink. In that year Aureliano Acanti’s poem Il Roccolo Ditirambo mentioned Prosecco among wines. The name was historically associated with a village near Trieste and with a grape also called Prosecco. Claims identifying it directly with Pliny the Elder’s ancient wine Pucinum remain disputed and should not be treated as a secure lineage.

The eighteenth-century wine was not necessarily the bright, tank-fermented sparkling wine familiar today. Still and lightly effervescent wines existed in the region, while controlled sparkling production developed more substantially during the nineteenth century. Local viticulture, particularly around Conegliano and Valdobbiadene, benefited from expanding technical education and experimentation. Before reliable pressure control, retained carbon dioxide could produce variable results, sediment, or broken bottles.

Modern Prosecco is made principally from Glera, the current name for the grape historically called Prosecco. Growers harvest and press the grapes, generally aiming to limit harsh extraction. Yeast ferments the juice into a dry base wine. For most sparkling Prosecco, producers then place the wine in a sealed pressure tank with yeast and fermentable sugar. A second fermentation creates carbon dioxide, which dissolves into the wine. The wine is filtered under pressure and bottled without losing its sparkle. Sweetness may subsequently range from very dry to noticeably sweet, depending on residual sugar and finishing choices.

This tank process is often called the Martinotti or Charmat-Martinotti method. Federico Martinotti devised a practical Italian system in the 1890s, and Eugène Charmat later developed and commercialized related pressure-tank equipment. It is therefore anachronistic to apply the supplied tank recipe to wine made in 1754. The method became important because it was faster and less laborious than conducting secondary fermentation in individual bottles, while preserving the fresh fruit and floral character sought in Glera.

Since 2009, European regulations have treated Prosecco primarily as a protected geographic designation, while the grape is officially called Glera. Prosecco DOC covers a broad area of Veneto and Friuli-Venezia Giulia; smaller DOCG zones include Conegliano Valdobbiadene and Asolo. Global demand has made the wine an accessible symbol of celebration and the basis of drinks such as the Bellini and Spritz. That expansion has brought substantial rural income, but intensive hillside viticulture has also prompted scrutiny of erosion, pesticide exposure, landscape change, and ecological pressure.

Estimates represent modern sparkling Prosecco at roughly 10.5–12% alcohol by volume. Alcohol level and residual sugar vary substantially by producer and sweetness category. These figures do not describe an eighteenth-century wine of uncertain style.

Historical context

Venice remained the capital of an independent maritime republic, while Trieste was a Habsburg free port competing for Adriatic trade. Wine moved in barrels rather than refrigerated or pressure-controlled containers, and glass bottles were becoming more dependable but remained expensive. European producers understood alcoholic fermentation through practice, not microbiology: yeast would not be recognized as a living agent of fermentation until the nineteenth century. The industrial pressure tanks used for modern Prosecco were still more than a century away.
