Retsina is a dry Greek wine deliberately flavored with pine resin during fermentation. Most modern examples are white, although rosé versions exist, and Savatiano and Roditis are among the grapes commonly used. The resin contributes aromas often described as pine, balsam, herbs, or turpentine. Its intensity varies greatly: inexpensive twentieth-century versions helped create a reputation for aggressive resin, whereas many contemporary producers aim for cleaner fruit and a lighter, integrated pine character.

The drink is frequently presented as a direct survival from antiquity. That claim requires qualification. Archaeological residues and ancient agricultural writings show that Mediterranean winemakers used resin and pitch in several ways. Resinous materials could seal porous ceramic vessels, while resin, pitch, and other additives could influence flavor and help protect wine during storage. Ancient consumers therefore certainly encountered resinated wines. Evidence does not, however, establish that a standardized product called retsina began in 100 BCE or that an ancient recipe continued unchanged into the present.

Modern production starts by crushing grapes and fermenting the juice, now generally in temperature-controlled tanks. A measured quantity of pine resin—commonly associated with Aleppo pine—is introduced during fermentation. Alcohol and fermentation activity extract aromatic compounds from it. The solid resin is subsequently removed, and the wine is clarified, stabilized, and bottled. These controlled operations differ substantially from coating an amphora with pitch or transporting wine in a resin-treated vessel. Ancient fermentation would also have depended on naturally occurring yeasts rather than the predictable commercial cultures available to modern wineries.

Retsina became especially associated with Attica and with everyday taverna drinking. Savatiano suited the dry conditions of central Greece and could supply large quantities of relatively neutral wine capable of carrying the resin aroma. During the expansion of tourism after the Second World War, bottled retsina became an internationally recognizable Greek product. Mass production spread it widely but also encouraged a stereotype of harsh wine whose resin masked poor fruit or oxidation. That explanation is plausible for some low-quality examples, but resin is not inherently a disguise: careful grape selection and restrained dosing can produce a balanced wine.

Today, retsina has a protected traditional identity in Greece rather than being merely any wine with pine flavoring. It is normally served cool with foods such as grilled fish, fried seafood, salty cheese, garlic-rich dishes, and meze, whose strong flavors can complement its resinous edge. Its significance lies less in an uninterrupted ancient formula than in the deliberate modern transformation of an old preservation and flavoring practice into a distinct national wine style.

Historical context

The eastern Mediterranean was being drawn into the Roman political and commercial system following Rome’s conquest of mainland Greece in the second century BCE. Wine circulated locally and over long sea routes in ceramic amphorae, often identified today through vessel forms, stamps, and shipwreck cargoes. Grapes, olives, and cereals dominated much of Mediterranean farming. Resin, pitch, ceramic containers, and wooden stoppers were established parts of wine storage and transport, although practices varied by region and producer.
