Tesgüino is a fresh fermented maize drink most closely associated with Rarámuri communities of the Sierra Madre Occidental, especially in Chihuahua. Spanish-language accounts use tesgüino for several Indigenous maize beers in northern and western Mexico, while Rarámuri terminology varies by community and context. The drink’s exact age cannot be fixed from the assigned year 1600. Maize fermentation long predates modern brewing, but surviving documentation does not establish that tesgüino emerged in that particular year or as a result of the Columbian Exchange.
Making it begins with maize rather than malted barley. Kernels are soaked and germinated, activating enzymes that help convert stored starch into fermentable sugars. Ethnographic descriptions connect large batches with curing ceremonies, seasonal observances, community discussions, funerary or commemorative duties, and tesgüinadas—gatherings combining drinking, dancing, exchange, and social negotiation. It can also accompany cooperative work. A household that summons neighbors to cultivate, harvest, build, or perform another demanding task may provide food and tesgüino, turning maize stores and brewing labor into reciprocal obligation.
The drink is not socially neutral. Hosting demonstrates the ability to mobilize grain, fuel, vessels, time, and helpers, while serving patterns express hospitality and responsibility. Ceremonial consumption may facilitate collective participation, but intoxication can also contribute to accidents, disputes, or other harms. Outside descriptions have sometimes treated tesgüino chiefly as evidence of alcohol use, obscuring its religious, economic, and political functions within Rarámuri life.
Colonial rule brought missions, livestock, introduced crops, mining demands, displacement, and pressure on Indigenous institutions, yet it did not create the underlying maize economy. Tesgüino is better understood as an Indigenous fermentation tradition that persisted and changed through colonial and modern conditions. It remains primarily a locally made, highly variable ceremonial drink rather than a national commercial beer style. Contemporary craft interpretations may stabilize recipes or alcohol levels, but those products should not be assumed to reproduce community brewing or its social meaning.

Historical context
Spanish colonial power was expanding through northern New Spain from mining and mission centers, although much of the Sierra Madre remained beyond close colonial control. Silver moved over long-distance routes toward central Mexico and across the Atlantic and Pacific, while Indigenous communities maintained maize agriculture adapted to rugged highlands and sharp seasonal variation.
