Airag and koumiss belong to a family of fermented mare’s-milk drinks made across the Eurasian steppe. “Airag” is specifically Mongolian terminology, while koumiss—also rendered kumis, kymyz, or similar forms—usually refers to related Turkic and Central Asian traditions. They are closely comparable, but the names should not erase regional differences in vessels, fermentation practice, flavor, and social use. No evidence identifies 1200 as their moment of invention. Rather, the date places an already established pastoral drink within the medieval steppe world, where later thirteenth-century observers described fermented mare’s milk among Mongol communities.

Mare’s milk is produced seasonally after foaling and contains more lactose but generally less fat and protein than cow’s milk. Because a mare yields only a modest amount at each milking, herders collect milk repeatedly while allowing the foal continued access. Fresh milk is added to a vessel seeded with an earlier ferment. Frequent stirring, beating, or churning distributes microorganisms and oxygen. Lactic-acid bacteria acidify the milk, while yeasts convert some sugar into alcohol and carbon dioxide. The resulting drink is usually thin, tart, mildly effervescent, and lightly alcoholic, although strength and acidity vary with milk composition, temperature, time, and microbial community.

Fermentation did not make mare’s milk indefinitely stable, but it extended its usefulness and transformed surplus obtained during the warm grazing season. Traditional vessels have included animal-hide containers and wooden or other reusable containers; the vessel and retained starter helped maintain an active culture. Claims about one universal medieval recipe would be misleading, since detailed preparation evidence comes mainly from later observation and living practice rather than a recipe written in 1200.

The drink’s importance exceeded nutrition. In mobile pastoral societies, horse herds provided transport, military power, wealth, meat, and milk. Serving fermented mare’s milk could signal hospitality, membership, abundance, or rank. Medieval descriptions also associate it with communal and courtly drinking, although access and ceremonial practice differed across societies. Its alcohol content made it socially distinctive from simply soured milk.

Airag remains prominent in Mongolia, while kymyz and related drinks continue in Kazakhstan, Kyrgyzstan, and neighboring regions. Contemporary production ranges from household fermentation to controlled commercial processing using selected cultures, regulated temperatures, refrigeration, and packaged distribution. Cow’s milk or reconstructed milk is sometimes used in industrial analogues where mare’s milk is scarce, but this changes the composition and sensory character. Modern hygienic controls reduce risk and variability; traditional batches, however, remain valued precisely because local herds, seasonal pasture, inherited cultures, and repeated handling create flavors that standardized production cannot fully reproduce.

Historical context

The grasslands and mountain corridors of Inner Asia supported mobile pastoral communities whose sheep, goats, cattle, camels, and horses converted seasonal pasture into meat and dairy foods. After 1206, Mongol political expansion connected routes stretching thousands of kilometers across Eurasia; the territory around present-day Kyrgyzstan came under Mongol power during the early thirteenth century. Horses were essential to movement, warfare, communication, and wealth, while seasonal milking turned living herds into renewable food resources. Fermentation remained a practical way to use milk quickly without refrigeration, although it did not provide indefinite preservation.
