Burong isda is a Filipino preparation in which fish, cooked rice, and salt undergo fermentation together. Salt discourages some spoilage organisms while selecting for salt-tolerant microbes, but safe results depend on adequate salting, acidification, cleanliness, and temperature control. Fermentation is not equivalent to sterilization, and traditional practice commonly includes cooking the mixture before it is eaten.

Modern burong isda is often sautéed, commonly with garlic and sometimes onion, tomato, or ginger, although additions differ among cooks. It may be served as a strongly flavored accompaniment to rice, vegetables, or fried and grilled foods rather than consumed as a large main portion. Freshwater fish are characteristic, but no single species defines every version. The balance between rice and fish can also range from an identifiable fish preparation to a soft, porridge-like ferment.

Historical context

The Philippines was moving from Spanish rule to United States colonial administration after the Philippine Revolution and the Spanish-American War. Most Filipinos still lived in rural communities, and irrigated rice agriculture, inland fishing, local markets, salting, drying, and household fermentation remained central to food supply.
