Cabrales is a powerful blue cheese associated with the high valleys and cave systems of eastern Asturias. It is made from raw, whole cow’s milk or from seasonally varying mixtures that may include sheep’s and goat’s milk. Mixed milk is therefore permitted rather than obligatory. The finished cheese has an ivory paste crossed by blue-green growth, a penetrating aroma, and a flavor that can combine salt, acidity, creaminess, and peppery mold notes. Texture varies with age and moisture, from buttery to friable.

Its precise invention is unknown. Eighteenth- and nineteenth-century descriptions establish Cabrales as an Asturian cheese tradition, but a single origin year or named inventor cannot be defended. Stories that portray cave ripening as an accidental discovery belong to legend rather than documented history. The practice fits a pastoral economy in which households needed to convert highly perishable milk into a durable, valuable food. Cow, sheep, and goat milk could fluctuate with herd composition, season, altitude, and household resources; modern cow-only Cabrales consequently does not represent an entirely different cheese.

Production begins by warming milk and coagulating it with rennet. The curd is cut, drained, and placed loosely into molds rather than pressed into a dense wheel. After salting and initial drying, cheeses mature in naturally cool, humid caves. Air spaces in the open curd allow oxygen-dependent blue molds—principally Penicillium roqueforti—to grow internally. Traditional makers relied substantially on microorganisms present in the dairy and ripening environment; some modern producers use selected cultures for greater consistency. Piercing can encourage aeration, but naturally occurring curd channels are also important. Wheels are turned and cleaned during a maturation lasting months.

Cave conditions are not decorative folklore. Stable cool temperatures, high humidity, and air movement limit drying while supporting mold development and enzymatic breakdown of fats and proteins. These processes create Cabrales’s softening texture and forceful aroma. Historically, wheels were sometimes wrapped in leaves for sale, a practice that could also suggest age and rustic authenticity. Contemporary regulated cheese is normally sold in foil, and protected-origin rules, inspections, traceability, and hygiene controls have made production more standardized without eliminating cave maturation or raw milk.

Cabrales is usually eaten in small portions because of its intensity and salt content. It may be served with bread, cider, or wine, or incorporated into sauces for meat, potatoes, and other dishes. Its modern importance lies less in industrial scale than in the survival of a place-specific ripening system: pastoral milk, human cheesemaking skill, cave ecology, and microbial action remain visibly connected. Refrigeration and controlled cultures have reduced variability, but they have not replaced the mountain caves that give the cheese its defining environment.

Historical context

Asturias remained predominantly rural, with difficult mountain transport and household economies closely tied to cattle, small stock, grains, cider, and dairy production. Spain was ruled by Charles IV from 1788, while mechanized industry was accelerating most visibly in Britain. Refrigeration did not yet exist: salting, drying, fermentation, and naturally cool storage were essential tools for preserving food. Mountain caves could therefore function as valuable ripening chambers, allowing milk produced across a short pastoral season to become a storable and marketable cheese.
