Gari is a dry, granular food made from cassava, a South American root crop that became indispensable across much of West Africa. These steps are food-safety measures as well as methods of flavor development and preservation; inadequate processing can leave hazardous residues.
After fermentation, the compressed mass is broken up and sieved. Small granules are roasted in a broad pan while being stirred continuously so that they cook and dry without burning. Roasting limits further microbial activity and produces a shelf-stable food that can be stored and traded. Some modern gari is enriched with palm oil, giving it a yellow color and additional fat, while white gari is made without that addition.
Gari may be eaten dry as a snack, soaked in water and combined with sugar, milk, groundnuts, or other additions, or stirred into boiling water to form a stiff dough commonly eaten with soups and stews. These serving forms change its nutritional density substantially: soaked gari contains much more water, while sweetened versions can carry considerable added sugar.
Contemporary production ranges from household and small-enterprise processing to mechanized plants using powered graters, hydraulic presses, controlled roasting equipment, and improved hygiene. The essential sequence remains recognizable. Gari’s enduring importance lies less in a single moment of invention than in a successful West African transformation of an introduced crop into a safe, transportable, marketable, and culturally embedded staple.

Atlantic commerce connected West African ports with Europe and the Americas, while the transatlantic slave trade was still operating on an enormous scale.
