Iru and dawadawa are names applied to related West African condiments made principally from the seeds of the African locust bean tree, Parkia biglobosa. Iru is especially associated with Yoruba-speaking communities, while dawadawa is used more widely in parts of the savanna and neighboring regions. Neither name denotes a completely standardized product. Beans may remain whole, be mashed into cakes, or be dried and ground, and local producers differ in fermentation time, added salt, wrapping, and storage. The year 1800 should therefore be read as an atlas reference point, not a documented moment of invention.

Production begins with an unusually demanding raw material. Mature pods yield hard seeds surrounded by sweet pulp. The seeds are boiled for many hours, after which their tough coats are removed by pounding, rubbing, washing, or combinations of these operations. A second cooking softens the cotyledons. Producers then drain and heap the beans in baskets, calabashes, trays, or leaf wrappings and hold them warm for roughly two to several days. Traditional batches rely on microorganisms from the beans, utensils, leaves, and working environment rather than an intentionally added starter. Bacillus species commonly dominate this alkaline fermentation. As they break down seed proteins, the pH rises and the beans become brown, sticky, soft, and powerfully aromatic.

The finished condiment is used sparingly rather than eaten as a staple. Crumbled or mashed into soups, sauces, and stews, it contributes saltiness when salted, but more fundamentally supplies savory flavor and aroma derived from protein breakdown. Its fats and proteins also add nutritional density, although the small quantity normally served limits their contribution to an individual meal. Recipes and preferred aromas differ across households and markets; what outsiders describe simply as pungent can signal quality, familiarity, and regional identity to experienced consumers.

Locust-bean processing also carries economic significance. The tree grows across broad areas of sub-Saharan West Africa and can provide pods without annual replanting. Collecting and transforming its seeds has commonly supported household exchange and market trade, with women prominent in processing and retailing in many documented communities. Claims for a single place or date of origin are not securely established, and present-day practice cannot by itself prove the condiment’s precise antiquity.

Modern iru and dawadawa range from moist, leaf-wrapped beans to salted cakes, dried granules, and packaged powders. Controlled starter cultures, improved heating, sealed packaging, and hygiene programs can reduce spoilage and batch variation. Commercial bouillon cubes have displaced or supplemented fermented beans in some kitchens, yet traditional products remain valued for a complex flavor that a simple salt-and-flavoring cube does not reproduce.

Historical context

West Africa contained dense farming districts, long-established market towns, and states connected by regional trade in grain, salt, livestock, cloth, kola nuts, and other foods. Atlantic commerce was expanding and profoundly disruptive, but most everyday food still moved through local and inland networks. African locust bean trees were integrated into parkland farming systems, where useful trees were retained among cultivated fields. Fermentation, smoking, drying, and oil processing remained essential technologies in a climate where fresh foods spoiled rapidly and mechanical refrigeration did not exist.
