Reconstruction
Shoyu is a salty, aromatic liquid seasoning produced by fermenting soybeans, usually with wheat, in a mold-inoculated koji followed by a brine fermentation. Its modern identity encompasses several Japanese styles rather than one fixed medieval formula. Koikuchi, now the dominant general-purpose type, normally combines soybeans and wheat; usukuchi is lighter in color but often saltier; tamari is generally richer in soy and contains little or no wheat; and other regional styles vary in sweetness, color, and maturation.
A frequently repeated origin story assigns a decisive moment to 1254, when the Zen monk Kakushin is said to have returned from Song China and introduced a fermented miso tradition to the Yuasa area of present-day Wakayama Prefecture. According to later tradition, liquid separating from the paste became an ancestor of local soy sauce. This is culturally important but does not securely document the invention of modern wheat-rich shoyu in that year. Japan already possessed earlier traditions of fermented soybean pastes and hishio-like seasonings, while clearer evidence for commercial soy-sauce production and recognizable regional styles belongs mainly to the early modern period.
In traditional production, soaked soybeans are steamed, wheat is roasted and cracked, and both are inoculated with an Aspergillus koji culture. The mold's enzymes break proteins and starches into amino acids and sugars. The koji is mixed with concentrated brine to form moromi, a mash fermented and matured by salt-tolerant yeasts and lactic-acid bacteria. Producers stir or otherwise manage the mash over months, then press it through cloth. The extracted liquid is clarified and commonly heated, stabilizing it and developing aroma and color. Exact organisms, proportions, temperatures, and aging periods differ among breweries.
During the Edo period, expanding cities and transport networks encouraged specialized production. Kansai centers retained important older traditions, while breweries around Noda and Choshi supplied the growing city of Edo. Wheat-rich koikuchi suited local cooking and eventually became Japan's most widespread style. Wooden vats, skilled microbial management, and seasonal maturation later gave way in much mass production to selected cultures, controlled temperatures, steel tanks, filtration, and standardized composition. Some producers nevertheless continue long aging in wooden vessels.
Shoyu mattered because fermentation converted beans and grain into a concentrated source of salt, aroma, browning color, and umami-rich amino acids. It became integral to simmered dishes, grilled foods, dipping sauces, pickles, and preparations associated with sushi and noodles. Global Japanese migration, restaurant culture, and industrial bottling subsequently carried it far beyond Japan. Modern products range from traditionally brewed sauces to faster hydrolyzed or blended seasonings, so the label alone does not establish one method or historical lineage.

Historical context
Japan was governed through the Kamakura shogunate, although the imperial court remained an important cultural authority. Maritime traffic linked the archipelago with Song China, carrying Buddhist texts, ceramics, medicines, technologies, and food knowledge. Rice taxation supported warrior government and religious institutions, while soybeans, wheat, barley, millet, and vegetables formed part of a varied agricultural economy. Fermented soybean pastes and salted seasonings were already known, but the urban markets, commercial breweries, and transport systems that later made bottled shoyu widely available had not yet reached their Edo-period scale.
