Polvilho azedo is not a finished dish so much as a transformed ingredient: cassava starch fermented in water and traditionally dried in the sun. In Brazil it is distinguished from polvilho doce, the comparable unfermented or less-fermented starch. Sour starch has a sharper aroma and acidity, but its defining culinary property is expansion. When mixed into dough and heated, it can produce light, hollow, crisp structures without relying entirely on wheat gluten or added yeast.

Production begins with cassava roots, which are peeled, washed, grated or crushed, and mixed with water. The fibrous pulp is strained away, leaving starch to settle. After decanting, the wet starch remains in fermentation vessels or tanks. Naturally occurring communities dominated by acid-producing bacteria, with other microorganisms potentially participating, lower the pH and alter the starch. The duration and microbiology vary substantially among producers. The fermented mass is then broken up and dried, historically in direct sunlight. Research on the product indicates that fermentation and sun exposure together modify its baking behavior; simple addition of acid does not fully reproduce traditional sour starch.

These operations also belong to the much older South American history of making cassava safe and useful. Cassava roots can contain cyanogenic compounds, with concentrations depending on variety and growing conditions. Peeling, grating, washing, separation, fermentation, and drying remove much of this hazard. Because polvilho is an extracted starch rather than whole cassava meal, most protein, fiber, fat, and micronutrients are also lost. Its nutritional contribution is therefore chiefly carbohydrate.

Indigenous expertise clearly preceded European colonization, but evidence does not securely establish that the specific fermented, sun-dried starch known by this Portuguese name originated in 1800 or in Rio de Janeiro. It is better understood as a Brazilian regional tradition whose historical documentation and industrial standardization became increasingly visible over time. Minas Gerais and several southern and southeastern producing regions are strongly associated with its manufacture and use.

Sour starch appears in baked biscuits, sequilhos and other regional preparations, and in some formulations of pão de queijo. Cheese bread recipes may use sour starch, sweet starch, or a mixture, so the ingredient should not be treated as universal. Scalding the starch with hot liquid, adding eggs, fat, milk, or cheese, and baking at high heat exploit its expansion while shaping flavor and texture. Modern manufacturers may control acidity, fermentation time, water quality, and hygiene, yet artisanal products remain variable. The enduring significance of polvilho azedo lies in this practical microbial transformation: a perishable tropical root becomes a dry, transportable ingredient with baking qualities that ordinary cassava starch does not reliably possess.

Historical context

Brazil remained a Portuguese colony built upon plantation exports and the coerced labor of enslaved Africans and their descendants. Rio de Janeiro had served as the colonial capital since 1763 and linked inland mining and farming districts to Atlantic trade. Cassava, domesticated in South America thousands of years earlier, was already a fundamental food across Indigenous, settler, and enslaved communities. Processing commonly remained household- or village-scale, using graters, sieves, settling vessels, presses, and sun drying rather than mechanized starch plants. The year 1800 should be treated as an approximate catalog date, not a securely documented moment of invention.
