Sri Lankan buffalo curd is a firm fermented milk traditionally made from the rich milk of domestic water buffalo. It is commonly eaten as a cooling dessert or snack, most famously with a stream of dark palm treacle. Kithul treacle, boiled from the sap of the fishtail palm, is especially associated with the pairing, although other sweeteners are also used. The contrast is central to the dish: tart, creamy curd against smoky, concentrated sweetness.
Production begins by heating or boiling fresh buffalo milk. This reduces competing microorganisms, concentrates the milk to some degree and changes its proteins so that they form a stable gel during fermentation. After cooling to a temperature suitable for lactic-acid bacteria, the milk is inoculated with curd from an earlier successful batch or, in commercial production, a selected starter culture. It is then poured into containers—traditionally low-fired earthen pots—and held warm without disturbance. As bacteria convert lactose into lactic acid, acidity rises and the milk proteins coagulate, producing a spoonable set curd rather than a drink.
Buffalo milk normally contains more fat, protein and total solids than ordinary cow’s milk, helping explain the curd’s dense body and rich flavor. Earthen vessels absorb some whey and provide a familiar serving package, but claims that the pottery itself reliably supplies the necessary microorganisms should be treated cautiously: the starter and production environment are more defensible sources. Hygiene is critical because fermentation does not compensate for contaminated milk or dirty equipment.
The antiquity of this specifically Sri Lankan preparation is difficult to establish. Water buffalo husbandry and fermented milks have long histories in South Asia, but an exact origin in 1600 is not documented. Nor is there good reason to attribute the dish’s creation to the Columbian Exchange. The date is better understood as a broad historical placement than as a known moment of invention. Later descriptions and living practice establish the dish much more securely than early-modern evidence does.
Today, curd is produced by households, small dairies and larger processors, particularly in areas associated with buffalo keeping. Refrigeration, stainless-steel equipment, standardized starters and quality controls can make production safer and more predictable, while clay pots remain commercially and culturally important. Cow-milk versions and blended products also circulate, but buffalo milk continues to define the prestigious traditional form. Served with treacle, the curd links dairy pastoralism to palm-sap harvesting and preserves a distinctive Sri Lankan combination of fermentation, craft pottery and sweetness.

Historical context
Portuguese power was concentrated around parts of Sri Lanka’s coast, while the inland Kandyan kingdom remained politically independent. Colombo was an Indian Ocean port connected to South India, Southeast Asia and European maritime networks carrying spices, textiles and precious metals. Most food production nevertheless depended on local farming, herding, fishing and seasonal markets. Water buffalo were valuable as draft animals and dairy stock in wet agricultural landscapes, but surviving evidence does not securely date the emergence of this particular curd preparation to 1600.
