Peruvian ceviche is a preparation of raw seafood seasoned with salt, chile and acidic juice, usually accompanied today by sliced onion and often cilantro. Its apparent simplicity conceals a layered history. Archaeology demonstrates that communities on Peru’s coast depended heavily on marine fish and shellfish for millennia, but fish remains alone cannot establish that ancient people made ceviche. Claims that a specific pre-Hispanic beverage or fruit juice was used to marinate fish remain plausible reconstructions or later traditions, not secure evidence for the modern dish.
The recognizable citrus-based form could only emerge after the Spanish conquest introduced Old World citrus and onions to the region. Indigenous ají peppers supplied the heat, while Peru’s cold, nutrient-rich coastal waters provided abundant seafood. Written references from the nineteenth century anchor cebiche or seviche as an established Peruvian preparation, although spelling, ingredients and marinating times varied. Consequently, the assigned date of 1800 should be read as an approximate historical marker rather than an invention date.
Preparation begins with exceptionally fresh fish, commonly a firm marine species, cut into pieces and mixed with salt, ají and citrus juice. Red onion and cilantro are widespread modern additions but are not universal. Acid denatures fish proteins, making the surface opaque and firm without applying heat; it does not cook fish in the microbiological sense. The seasoned liquid released by the mixture is known as leche de tigre. Typical accompaniments include sweet potato, choclo or large-kernel maize, toasted cancha, lettuce and sometimes seaweed, creating contrasts of heat, acidity, sweetness and crunch.
Some older recipes and remembered practices called for marination lasting hours. The dominant contemporary restaurant style cures fish only briefly and serves it immediately. Japanese migration and Nikkei culinary practice are frequently credited with encouraging an appreciation for minimally treated raw fish, but the extent of that influence on shortened marination is difficult to isolate from changing restaurant fashions, refrigeration and improved access to fresh seafood. It is therefore better understood as one influence among several, not a single documented invention.
During the twentieth and twenty-first centuries, ceviche became a powerful emblem of Peruvian national cuisine and spread internationally in many forms, including versions made with shellfish, oily fish, freshwater fish or nontraditional flavorings. Its modern success depends heavily on cold storage, hygienic handling and responsible sourcing. Lime juice cannot reliably eliminate parasites or pathogenic bacteria, so appropriate fish selection, freezing where required and strict temperature control remain important. Ceviche connects Peru’s ancient coastal dependence on seafood with colonial crop transfers and modern restaurant culture, but no uninterrupted recipe lineage from antiquity can be demonstrated.

Historical context
Lima was the capital of the Spanish Viceroyalty of Peru and probably held roughly 50,000–60,000 inhabitants, with the port of Callao connecting it to Pacific and Atlantic trade networks. Peru would remain under Spanish rule until independence was proclaimed in 1821. Coastal fisheries benefited from the highly productive Humboldt Current, while citrus, onions and other Old World crops had already been cultivated in the Americas for centuries. Mechanical refrigeration and modern cold chains were still decades away, so seafood cookery depended on rapid movement from landing place to kitchen, salting, drying or immediate consumption.
