Reconstruction
Caral rose on a desert terrace in Peru’s Supe Valley, about 23 kilometers inland from the Pacific. During the third millennium BCE, its inhabitants constructed platform mounds, sunken circular courts, residences, and other buildings across a central architectural zone of roughly 65 hectares. Radiocarbon evidence securely places major occupation and construction between about 2627 and 1977 BCE, while the broader Caral-Supe or Norte Chico cultural florescence is conventionally dated approximately 3000–1800 BCE. Caral was therefore not an isolated settlement but part of a densely occupied regional landscape of inland and coastal centers.
Food connected that landscape. The arid coast received little rainfall, so cultivators diverted river water into fields and orchards. Archaeological plant remains indicate cotton and bottle gourds alongside edible crops such as beans, squash, sweet potatoes, achira, fruits, and, in disputed proportions, maize. Cotton was not food, but it was fundamental to food production: abundant fiber could be twisted into lines and knotted into nets capable of capturing schooling fish. Gourds supplied containers and probably fishing floats. Coastal communities such as Áspero harvested anchoveta, sardines, shellfish, and other marine resources, some of which could be dried for storage and transport inland.
The resulting economy was complementary rather than simply maritime or agricultural. Inland communities had irrigable land and fiber crops; coastal settlements had immediate access to one of the world’s most productive marine environments. The movement of cotton, gourds, fish, shellfish, and edible plants between ecological zones is a defensible reconstruction from their distributions, although no surviving accounts identify prices, markets, or administrative rules. Surplus production and exchange could have provisioned gatherings and construction labor, but direct evidence for formal taxation or state-controlled rations is insufficient.
Nor do the remains preserve a Caral cookbook. The society’s principal monumental phase was preceramic, so ceramic-pot cooking was unavailable. Drying fish is well supported as a practical regional preservation strategy, while roasting, ember cooking, stone heating, or serving foods in gourds are reasonable reconstructions rather than documented recipes. Stable-isotope research further complicates older portrayals of a fish-dominated Caral: C3 plants, probably including tubers and other crops, supplied most estimated calories at inland Caral, while marine foods were more important at coastal Áspero. Maize remains are documented, but studies disagree about how dietary central it was.
Caral matters because it demonstrates that early urban-scale organization did not require a single grain staple. Irrigation, plant-fiber technology, productive fisheries, and exchange between coast and valley worked together. Modern Peruvian coastal life still joins irrigated desert agriculture with Pacific fisheries, but this is an ecological continuity, not proof that any particular Caral institution or dish survived unchanged.
Historical context
Around 2600–2000 BCE, Egypt’s great pyramids were being built, Mesopotamian cities used cuneiform administration, and large Indus settlements were becoming urban centers. Caral developed independently in the Americas, without Old World crops, livestock, pottery, or writing. Its central architectural zone covered about 65 hectares, and it belonged to a network of at least 18 substantial preceramic settlements in the Supe Valley. These communities occupied narrow irrigable river corridors within an exceptionally dry coastal desert while drawing marine foods from the Pacific roughly 23 kilometers away.
