Reconstruction
Carthage began as Qart Hadasht, the Phoenician “new city,” on a peninsula beside the Gulf of Tunis. Radiocarbon measurements from its earliest excavated settlement layers indicate occupation in the late ninth century BCE, broadly consistent with the traditional foundation date of 814/813 BCE. Its position near the narrow passage between Tunisia and Sicily made it a natural stopping place between the eastern and western Mediterranean. During the seventh and sixth centuries BCE, the settlement developed into an increasingly important center within networks linking Phoenicia, North Africa, Sicily, Sardinia, Iberia and the Tyrrhenian coast.
Food evidence comes from several imperfect archives. Early Punic deposits at Carthage have yielded wheat, barley, lentils, peas, broad beans, grapes, figs and olives. These remains directly demonstrate presence or consumption, although they do not by themselves reveal whether each food was locally grown or imported. Later and mixed Punic contexts broaden the list, but should not automatically be projected back to 800 BCE. Animal remains show that livestock and fish also contributed to urban food supplies. Cereals were probably ground for bread or porridge, legumes boiled into stews, olives eaten cured or pressed, and grapes consumed fresh, dried or fermented; these preparations are reasonable reconstructions rather than surviving Carthaginian recipes.
At the waterfront, transport containers made food exchange visible. Amphora fabrics and forms can identify manufacturing regions, and Carthage produced local transport amphorae by the seventh century BCE while also receiving vessels from abroad. Such jars commonly carried wine, olive products and other preserved commodities, but shape alone does not prove a particular content. Grain was more often carried in sacks or bulk containers that rarely survive archaeologically. Salted fish could likewise travel farther than fresh fish, although the strongest evidence for extensive Punic fish-product commerce belongs mainly to the fifth century BCE and later.
Carthage was therefore not simply a warehouse for foreign luxuries. Its surrounding plains supported cereals, orchards, vineyards and livestock, while the city connected that productive hinterland to maritime exchange. Farmers harvested and processed crops; potters supplied standardized containers; merchants assembled cargoes; and sailors moved durable foods between communities with different harvests and tastes. Amphorae reduced leakage and simplified storage aboard ships, helping wine and oil become Mediterranean-wide commodities whose origins can now be reconstructed from discarded sherds.
The long-term significance of this system is clearest in Carthage’s combination of farming and commerce. Centuries later, Roman authors praised the agricultural work attributed to the Carthaginian Mago and reported that Rome ordered it translated after destroying the city in 146 BCE. Mago cannot document the city’s earliest centuries directly, but his reputation preserves evidence of a mature Punic agricultural tradition. Modern Mediterranean diets retain the same broad staples—grain, pulses, olives, wine, fruit and preserved fish—while today’s bottles, tanks and shipping containers continue the ancient logistical principle of packaging food for dependable long-distance movement.
Historical context
The Mediterranean was becoming more densely connected by sail. Phoenician communities extended from the Levant to North Africa, Sardinia and Iberia, while Greek settlements appeared in Sicily, southern Italy and, by about 600 BCE, at Massalia in southern Gaul. Assyrian and later Babylonian expansion placed increasing pressure on the Phoenician cities of the eastern Mediterranean. Carthage stood roughly 150 kilometers across open water from western Sicily and near productive northern Tunisian plains. Reliable population totals are unavailable, but archaeological expansion and growing local amphora production indicate that it developed from a colonial settlement into a substantial western Phoenician city during the seventh and sixth centuries BCE.
