Cucumber Appears in Medieval Europe

Around 1300, a southern Italian herbal recorded something botanically significant: a recognizable common cucumber, Cucumis sativus. In British Library manuscript Egerton 747, a plant labeled among the citruli bears short, unevenly cylindrical, warted fruits. Unlike the stylized plants copied repeatedly in many medieval manuscripts, this image contains enough diagnostic detail for a strong taxonomic identification. Comparable Italian and French illustrations followed during the fourteenth and fifteenth centuries, while the late-fourteenth-century Tacuinum Sanitatis manuscripts show cucumbers growing as familiar garden crops.

This evidence revises a long-standing story. Older translations routinely rendered Greek sikyos and Latin cucumis as “cucumber,” apparently placing the crop in ancient Greece and Rome. Botanical reassessment indicates that the hairy, sometimes extremely long or coiled fruits described by Roman authors fit vegetable forms of melon, especially snake melon, Cucumis melo Flexuosus Group. Ancient Mediterranean images likewise support melons, bottle gourds, and watermelons, but provide no compelling evidence for C. sativus. The claim that the emperor Tiberius ate common cucumbers throughout the year therefore rests on a doubtful modern identification.

The manuscript image of about 1300 was not Europe’s first encounter with cucumber. Written evidence, although more dependent on linguistic interpretation, traces an earlier movement westward from the crop’s South Asian homeland. Syriac, Persian, and Byzantine terminology suggests its presence east and northeast of the Mediterranean by the sixth or seventh century. Arabic medical and agricultural texts provide increasingly descriptive evidence in al-Andalus by the tenth century. Latin translations of Arabic material then indicate cucumber in southern Italy during the later eleventh century, and the mid-twelfth-century Circa Instans supplied text later associated with the Egerton illustration.

Medieval sources describe a warm-season vine that benefited from irrigation. Its fruits were generally eaten immature, while still green, before mature skins turned yellow or orange. Ibn al-Baytar’s thirteenth-century pharmacological compilation recommended small, thin-seeded cucumbers and noted their consumption pickled in vinegar. Late medieval pictures show short, warted fruits resembling established pickling-cucumber groups, but they do not reveal complete recipes or prove how ordinary households served them.

Cucumber’s arrival added a productive, relatively cool-tolerant cucurbit to European gardens and gradually displaced some vegetable melons from both fields and vocabulary. Medieval writers reassigned older cucurbit names, helping create centuries of confusion for translators. The firmest conclusion is therefore not that cucumber suddenly appeared in northern Italy and France in 1300, but that around that date European artists first left unmistakable visual evidence of a crop already moving through Mediterranean agricultural and medical networks. Today’s slicing and pickling cucumbers belong to that same domesticated species, although modern cultivars reflect centuries of subsequent selection.

Mediterranean Europe was connected to extensive commercial and scholarly networks linking Latin Christian regions with al-Andalus, North Africa, Byzantium, and the eastern Islamic world. Arabic medical and agricultural works were being translated into Latin, especially in Iberia and southern Italy. During the thirteenth century, intensified Eurasian contacts also moved people, texts, seeds, and horticultural knowledge over long distances. Around 1300, southern Italian herbal artists increasingly portrayed plants from observation rather than merely copying ancient models, creating unusually valuable evidence for identifying cultivated species.
