Reconstruction
Erlitou was more than a single palace: it was a rapidly enlarged settlement whose planned center concentrated monumental architecture, ceremonies, elite burials, and specialized crafts. Between approximately 1750 and 1530 BCE, it became the dominant center of the Yiluo basin in western Henan. By its developed phases, occupation covered roughly 300 hectares. Broad intersecting roads framed a palatial zone of rammed-earth compounds, while nearby enclosed workshops produced bronze and turquoise objects. These features support its interpretation as the seat of an early state or comparable centralized polity, although identifying it specifically as a capital of the Xia dynasty remains disputed.
The city depended on a much older northern Chinese farming tradition. Charred plant remains from Erlitou and the surrounding Yiluo region show that foxtail millet was the principal crop. Broomcorn millet, rice, soybean, and eventually wheat broadened the agricultural system. Rice was much less important regionally than millet and was disproportionately associated with major Erlitou-period centers. Some archaeobotanists consequently interpret it as a possible prestige food, but this is a scholarly inference rather than proof that rice was reserved for rulers.
Food crusts adhering to pottery provide unusually direct evidence of what entered some vessels. Carbon- and nitrogen-isotope measurements indicate mixtures involving C4 plants, principally millets, and C3 resources such as rice or wheat. Several residues are also compatible with animal products or freshwater fish. These bulk measurements cannot identify complete recipes, however, and one pot may have accumulated traces from multiple meals. Faunal remains document pigs, cattle, sheep, goats, and dogs at the site, but the presence of a species does not by itself establish how frequently it was eaten.
Millet grains could be dehusked, ground, boiled, or steamed, while legumes and meat could be cooked with cereals in ceramic vessels. Archaeology supports such general processes, but no written Erlitou recipe survives. Tripod cooking vessels, steamers, storage jars, and serving forms demonstrate a varied ceramic technology. Bronze jue and he vessels point to formal drinking or pouring practices among elites, although their exact contents and ritual meanings at Erlitou cannot be reconstructed securely.
Food helped sustain the labor behind palaces, roads, workshops, and regional exchange. It may also have expressed hierarchy through access to uncommon crops, animals, or serving vessels. Erlitou’s combination of millet agriculture, diversified crops, livestock management, and ceremonial vessels anticipated patterns more clearly documented in later Shang centers. Millet remains part of northern Chinese cooking today, but continuity of particular modern dishes from Erlitou cannot be demonstrated. The stronger legacy is systemic: resilient grain farming supported urban concentration, specialist labor, and increasingly formalized court consumption.
Historical context
The Yiluo basin was undergoing an exceptional concentration of people, labor, and specialist production. Erlitou grew from a settlement of at least about 100 hectares to roughly 300 hectares, with a palatial complex of approximately 12 hectares and a core containing ceremonial spaces, elite residences, and workshops. Rivers connected the basin internally and to wider exchange routes. Regional communities continued producing crops and utilitarian goods while the center concentrated bronze casting and other prestige crafts. No contemporary Erlitou historical texts are known, so names, rulers, and any identification with the later-recorded Xia dynasty remain archaeological and historiographical questions rather than established written history.

Written sources
