First Dairying at Barcın Höyük

At Barcın Höyük, dairying appears not as an isolated experiment but as an established part of village life. The settlement was founded in the Yenişehir Valley of northwest Anatolia around 6600 BCE and occupied through approximately 6000 BCE. Its earliest inhabitants cultivated crops, kept cattle, sheep, and goats, built timber-and-mud houses, and used pottery whose walls absorbed traces of the foods prepared in them.

A major organic-residue study examined 805 Neolithic potsherds. Interpretable lipids were recovered from 173, and 143 residues could be assessed isotopically. Differences between the carbon-isotope compositions of palmitic and stearic fatty acids identified abundant ruminant dairy fats, including in pottery from the settlement’s earliest phases. This is strong direct evidence that milk entered ceramic vessels, although the chemistry does not identify a particular animal or distinguish fresh milk from every possible processed product.

The vessel evidence nevertheless reveals changing practices. Early hole-mouthed pots and oval bowls frequently carried dairy residues. Across the sequence, roughly 70–80 percent of lipid-bearing bowls were associated with dairy. One later bowl contained both a milk-fat signature and ketones produced through heating, directly supporting heated dairy preparation in at least that vessel. After about 6200 BCE, four-lugged pots became especially associated with milk fats: 16 of 23 analyzed examples yielded dairy evidence. Their suspension-friendly form could have facilitated swinging or churning, but the production of butter, buttermilk, or an ayran-like drink remains a reasonable reconstruction rather than a directly identified recipe.

Spot something wrong in this reconstruction?

Animal bones provide complementary evidence. Domestic species account for more than 90 percent of the identified Neolithic remains, with cattle and sheep or goats prominent. Sheep mortality patterns are compatible with mixed meat-and-milk management, though they do not prove which species supplied each vessel’s contents. The pottery therefore gives the clearest evidence for dairying, while the faunal assemblage identifies the available herds.

Most adults in these communities probably lacked genetic lactase persistence. Transforming milk through fermentation, curdling, separation, or churning can reduce lactose and extend shelf life, but Barcın Höyük’s residues cannot establish exactly which techniques were used. The evidence securely identifies intensive dairy processing, not yogurt, cheese, or butter by name.

Barcın Höyük is thus one of the oldest well-documented centers of dairying in Anatolia, rather than the proven birthplace of dairying everywhere. Its bowls and later four-lugged pots show how herding knowledge and ceramic technology combined to turn seasonal milk into usable foods. Heating, culturing, curdling, and churning remain fundamental to dairy cuisines today, although uninterrupted descent from Barcın’s recipes cannot be demonstrated.

Historical context

Farming communities were extending westward from established areas of central and southwest Asia toward the Marmara region and southeastern Europe. Barcın Höyük stood on a natural rise beside a retreating lake in a generally wet, marshy Yenişehir Valley. Its occupation from about 6600 to 6000 BCE overlaps the rapid establishment of farming across the Aegean and Balkans. Pottery was initially uncommon at the site but became increasingly varied and suitable for heating, serving, suspension, and food processing. There were no states or written records in the region; knowledge of crops, herds, clay preparation, and milk transformation was transmitted through practice within households and migrating or interacting communities.

Archaeological

StrongA stratified Neolithic settlement sequence preserves houses, pottery, animal remains, burials, and other materials spanning approximately 6600–6000 BCE.

Residue chemical

StrongCompound-specific carbon-isotope measurements of fatty acids from pottery directly identify numerous residues consistent with ruminant dairy fats. One dairy-bearing bowl also yielded long-chain ketones indicating heating.

Zooarchaeological

ModerateDomestic cattle, sheep, and goats dominate the faunal assemblage, and sheep mortality profiles are compatible with mixed meat-and-milk management. These data support dairying but cannot assign individual residues to a particular species.

Dating

StrongThe settlement sequence and pottery contexts are supported by more than 80 radiocarbon dates. The reported milk residues are dated through their securely phased archaeological contexts rather than by direct radiocarbon dating of each residue.

Food identification

StrongThe identification of ruminant dairy fat is chemically well supported. Exact foods such as yogurt, cheese, butter, cream, or buttermilk cannot be securely distinguished.

Preparation method

ProbableVessel form, residue distribution, and limited heating evidence support dairy transformation in bowls and pots. Churning in suspended four-lugged pots is plausible but remains an archaeological and ethnographic inference.

Geographic attribution

StrongThe analyzed pottery derives from excavated contexts at Barcın Höyük in the Yenişehir Valley of Bursa Province, northwest Anatolia.

Historical interpretation

ProbableThe presence of substantial dairy residues in the earliest ceramics suggests that incoming farmers already possessed dairying knowledge. Its role in enabling westward farming expansion is a defensible hypothesis, not a directly observed causal relationship.

InterpretiveAny depiction of people milking animals, fermenting milk, or swinging four-lugged churns reconstructs activities from residues, vessel forms, faunal evidence, and analogy rather than direct visual evidence from the site.
