Reconstruction
Between the Civil War and the early twentieth century, Chicago turned slaughterhouse refuse from a disposal problem into a coordinated industrial stream. The decisive local setting was the Union Stock Yard, opened in 1865, where railroads concentrated enormous numbers of cattle, hogs, and sheep beside packing plants. Before such concentration, small butchers commonly saved hides and some fat, but blood, bones, entrails, and other remains were often dumped or buried because the volume was too small to justify specialized equipment. At Chicago scale, those same materials represented recoverable value.
Rendering meant heating fatty tissues and mixed animal remains so fat could be separated from water and solids. Technical accounts from the period and shortly afterward describe sorting material by intended use, chopping or hashing fats, and cooking them in kettles or closed tanks with steam. Clarified edible pork fat became lard; selected beef fats could yield oleo oil for oleomargarine, while lower-grade fats became tallow, soap stock, lubricants, or candles. Bones and connective tissues supplied grease, glue, and gelatin. The cooked residue, called tankage, was dried and ground for fertilizer; by about 1880 Chicago packers were also preparing some rendered residues as animal feed.
This was not one machine or a single invention. It was a system joining slaughter lines, steam power, chemistry, drying, storage, rail transport, and markets for many grades of output. Large packers such as Armour and Swift could install separate tallow, fertilizer, glue, and related departments that small slaughterers could not afford. By-product sales improved carcass economics and helped make centralized, year-round meatpacking more viable. They also broadened the industry's food range: lard, margarine ingredients, gelatin, meat extracts, and feed materials circulated alongside fresh, cured, and canned meat.
The celebrated claim that packers used everything but the squeal should not be read literally. Rendering recovered valuable solids and fats, yet substantial liquid waste, manure, blood, grease, and chemicals still entered sewers and the South Fork of the Chicago River, later notorious as Bubbly Creek. The plants also depended on dangerous, repetitive labor performed by a heavily immigrant workforce. Public exposure of packinghouse conditions helped produce the Federal Meat Inspection Act and the Food and Drugs Act on June 30, 1906, increasing federal oversight of edible meat products and sanitary processing.
The lasting legacy is the principle that slaughter generates multiple product streams, not meat alone. Modern rendering still converts inedible animal material into fats and protein meals, while edible fats and gelatin are handled under stricter sanitary and regulatory controls. The technology can reduce the amount of organic matter requiring disposal and recover nutrients, but Chicago's history also shows its limits: profitable recovery does not automatically prevent pollution, protect workers, or guarantee food safety. Industrial rendering therefore belongs both to the history of resource efficiency and to the history of the environmental and regulatory burdens created by mass meat production.
Historical context
Chicago grew from about 109,000 residents in 1860 to nearly 1.70 million in 1900. Railroads linked livestock-producing regions of the Midwest and Great Plains to eastern consumers, while ice-cooled rooms, refrigerated railcars, steam machinery, and later mechanical refrigeration supported year-round packing. The Union Stock Yard received roughly 3 million cattle and hogs in 1870 and about 12 million animals twenty years later. This industrial expansion continued despite the Great Chicago Fire of 1871 and helped make the city a symbol of modern urban production by the World's Columbian Exposition of 1893.

The approximately 1860 start is a broad lead-in. The best-defined beginning of Chicago's centralized stockyard and packing complex is the Union Stock Yard's opening on December 25, 1865, although slaughtering and rendering activities existed in the city earlier.
