Reconstruction
Between about 1200 and 900 BCE, San Lorenzo was the foremost Olmec political center in the humid lowlands of southern Veracruz. Its inhabitants occupied elevated ground surrounded by tributaries, wetlands, and seasonally flooded plains in the lower Coatzacoalcos basin. Rulers mobilized labor to reshape the plateau and erect basalt monuments, including colossal heads and thrones. Basalt drains and reservoirs also formed part of the built landscape, although scholars debate whether particular conduits primarily managed water, served ritual purposes, or combined both functions.
Food came from a diversified system rather than from maize alone. Archaeological and regional evidence identifies fishing, turtle collecting, waterfowl hunting, cultivation, and gathering as complementary activities. Fish such as snook were particularly suited to the estuarine and riverine setting, while several turtles could be collected as floodwaters rose or receded. Domestic dog was also eaten, and deer and other terrestrial animals contributed more modestly. Botanical preservation is difficult in the tropical environment, but maize fragments, phytoliths, and pollen indicate cultivation and increasing use during San Lorenzo’s later phases. Recent scholarship therefore cautions against portraying abundant maize surpluses as the original foundation of Olmec political power: productive wetlands and their aquatic foods may initially have been more important.
Ceramic vessels, grinding equipment, animal remains, and chemical residues reveal parts of the culinary process, but no complete Olmec recipe survives. Maize could be ground, while obsidian edges supplied efficient cutting tools for domestic and specialized work. Bowls and restricted-mouth vessels were used to prepare, serve, or consume liquids and semisolid foods. Chemical analysis has identified Capsicum residues in San Lorenzo pottery, demonstrating the use of chile without establishing its species or exact recipe. Theobromine residues likewise show that cacao products were consumed in liquid form. Some cacao vessels came from elite or ritual contexts, but cacao was not necessarily restricted to ceremonies.
San Lorenzo depended on exchange as well as local abundance. Obsidian unavailable in the Gulf lowlands arrived from multiple highland Mexican and Guatemalan sources. Basalt for monuments and grinding implements came from the Tuxtla region. Rivers facilitated movement through the lowlands, linking food procurement, transport, craft production, and political display.
San Lorenzo declined as a dominant center around 1000–900 BCE, while regional settlement and agriculture changed and La Venta rose farther east. Maize, chile, cacao, and river foods remain important in southern Mexican cuisines, but specific modern dishes cannot be traced directly to San Lorenzo. The defensible continuity lies instead in ingredients and practices: grinding maize, seasoning foods with chile, preparing cacao drinks, and exploiting tropical waterways.
Historical context
San Lorenzo stood within a tropical alluvial landscape crossed by navigable rivers and seasonal wetlands. Demographic reconstructions suggest approximately 9,000–10,000 inhabitants around 1200 BCE, although such estimates are model-based rather than census counts. The settlement covered several hundred hectares and required substantial organized labor for earthen construction, water conduits, monument production, and craft activity. Chemical sourcing shows that obsidian reached San Lorenzo from highland Mexico and Guatemala, while basalt was transported from the Tuxtla Mountains roughly 60 kilometers away. These connections placed the center within an interaction network extending far beyond the lower Coatzacoalcos basin, even though everyday subsistence remained closely adapted to local floods, fisheries, turtles, cultivated plots, and gathered plants.

StrongExcavations and regional surveys directly document the settlement, monumental basalt sculpture, modified plateau, ceramic assemblages, grinding tools, drains, reservoirs, and obsidian-working areas.

Residue chemical
StrongMass-spectrometric analyses identified theobromine associated with cacao and Capsicum biomarkers in archaeological pottery. These identifications demonstrate use but do not reveal complete recipes.
Food identification
StrongCacao and chile are chemically identified, while maize and several animal foods are supported by botanical or faunal remains. Proposed tuber use is less directly demonstrated and is not treated as certain.
Dating
StrongCeramic phase sequences, stratigraphy, and associated radiocarbon determinations securely place San Lorenzo's principal development in the Early Formative period, with florescence conventionally described around 1200–900 BCE and decline beginning near 1000 BCE.
Preparation method
LimitedGrinding implements, cutting tools, vessel forms, and absorbed residues establish broad processing and serving practices, but roasting, boiling, fermentation, seasoning combinations, and named dishes generally remain unrecoverable.
