Reconstruction
Between about 2300 and 1900 BCE, Taosi grew beside the Fen River in southern Shanxi into one of late Neolithic China’s largest and most internally differentiated settlements. Excavations have identified rammed-earth enclosures, residential districts, elite compounds, cemeteries, ceremonial spaces, workshops and a restricted storage area across a site exceeding 200 hectares at its height. Archaeologists therefore commonly describe Taosi as an early urban political center, although calling it a capital or state depends partly on how those categories are defined.
Food made this concentration of people possible. Flotation of archaeological soil recovered abundant charred foxtail millet and broomcorn millet, the drought-tolerant cereals that underpinned farming across northern China. Only a small quantity of rice was found. Its presence demonstrates contact with a crop associated more strongly with wetter regions, but whether Taosi’s rice was grown locally, obtained from nearby communities or transported over longer distances remains unresolved. The grain assemblage nevertheless shows that ordinary subsistence rested overwhelmingly on dryland millet agriculture.
Cooking pots, tripods and steamers belong to a wider northern Chinese tradition of preparing cereals by boiling and steaming. Millet was probably eaten as cooked whole grain, thick porridge or softer gruel, but no named recipe survives, and particular consistencies cannot be reconstructed directly. Pigs supplied the principal meat. Sheep, cattle, dogs and wild animals are also represented, although zooarchaeological studies indicate that cattle and sheep could serve additional purposes, including traction, wool, ritual and bone working. Some cattle and sheep were nonlocal, linking Taosi to expanding networks of herding and exchange.
Food also marked inequality. Rich burials contain elaborate serving vessels, wooden tables, cutting implements and pig remains, sometimes arranged in ways interpreted as mortuary displays of food preparation and consumption. These objects directly attest unequal access to animals, specialized goods and ceremonial service. Reconstructing full banquets or a formal system of “food politics,” however, is a scholarly interpretation rather than an observed event. Likewise, proposed ice storage, specialized roasting ovens, rice alcohol and salt-cured pork remain plausible or debated readings of particular structures and deposits, not securely identified foods or technologies.
During Taosi’s late phase, monumental areas and elite graves were damaged, occupation contracted and the settlement lost its earlier prominence. Conflict may have contributed, but invasion, internal upheaval and environmental strain remain competing explanations. Taosi’s millet cookery, pig husbandry and socially charged feasting resemble practices important in later northern China. They should not be treated as a proven unbroken recipe lineage, yet they reveal enduring food-system principles: dryland grains supporting dense settlements, pork carrying social value, and control of surplus and ceremonial dining helping turn agricultural wealth into political authority.
Historical context
Around 2300–1900 BCE, several regions of China supported large, socially stratified centers rather than a single unified civilization. Taosi flourished as Liangzhu declined in the lower Yangtze, while the walled center of Shimao developed farther north. Across Eurasia, crops and livestock were moving over great distances: northern Chinese millets were spreading westward, while domesticated sheep and taurine cattle of western Eurasian ancestry had entered northern China. Egypt’s pyramid-building Old Kingdom ended near the beginning of Taosi’s sequence, and Mesopotamian cities were already using writing. Taosi itself predates China’s securely readable Shang oracle-bone inscriptions by many centuries.
